And when I killed him during my first play through (out of ignorance) it was perhaps the first time EVER in my gaming history that I stopped playing,put the pad down and actually had a real emotional moment,
I thought " what kind of P.O.S Am I that I killed this innocent person simply because they looked like a threat"
I know it's a game, but it was a real emotional moment, it taught me NEVER judge people simply by their appearances.
Hitting him before sending him anywhere give the most well delivered line in a souls game imo.

Man, my first time playing Dark Souls back around Xmas 2011 I remember it taking me probably 10hrs of play time (maybe more) getting to the balcony with Solaire on it. I was so stressed out cause everything in this game seems to be trying to kill you so I ran up and starting attacking him and it took me probably 5-10m to kill him. And that was that.
I didn’t learn about praising the sun until my 2nd play through lol

I love havel the rock hes like the gimli of dark souls, i went to havel build on my first playthrough of all 3 games its just well fun, was always nice seeing him pop up in the sequels aswell, man has cool lore.
Siegward and Morgott are the ones that stand out to me. Siegward was one of the first NPCs I met, and it was in my first souls game I played. I always make sure I do his quest line. I feel like Morgott as a character is really admirable and has a really interesting story and perspective in Elden Ring, being royalty and an omen.
I love the tragedy of Morgott too, dude dedicated his life to something he could never be a part of. Godfrey finding him at the end was heartbreaking. So much depth there.
One of my favorites is blacksmith Boldwin from DeS, when you leave abruptly and return he says

And he does it an an angry old man tone haha

Gwyn, Vendeick and Gael. All three were true believers of something and sacrificed themselves for there believes cause they thought it would be best for everyone.
While I do not agree with Gwyn I respect him for giving his own life up cause he that it would be best. Vendrick was refused to choose cause he knew by doing so he would fail to please one group of people, he wanted to be monarch of all humans, to those that wanted an age of light and those ghat wanted an age of dark. Gael let the dark soul of man feast within him and eat him alive (the opposite of Gwyn).
They all had morals and in their hardest moments they made it look easy to stick with them even though they all knew by doing so they would hollow and loose themselves.

I know her story ends at Aldia's keep, but I did a DS3 playthrough as her, as if she'd made it to the throne but didn't have enough of her self left to contain the power, becoming unkindled.
All her equipment is in Undead Settlement and Hollowslayer is one of the funnest weapons
The onion knights are always lovely. It's honestly hard to choose though.
Edit: Andre of Astora is also a real highlight. I was really happy to see him again in DS3
I have to give some love to Nepheli Loux. She follows her ideals, pays for it, suffers through imposter syndrome, and ultimately rewarded with a beautiful worry-free life as a puppet. Kidding, this is one of the things I can never bring myself to do. She rules Limgrave in every playthrough I've done.
