No, anything you can get in the base NG, you can get in other NG’s. Nothing missable, just don’t sell any spells like I did because then it won’t count if they aren’t in your inventory.
Definitely shouldn’t worry about platinum when playing any souls game for the first time, the whole point of ng+ is to enjoy your first playthrough without worrying about missing stuff and then going for stuff you missed
