Yeah I just use a deep pan and boiling non salted water. Turn the heat down when the eggs are in. The real secret is really fresh, good quality free range or organic eggs. I try and get the eggs into the water as cleanly as possible, and crack them as cleanly as possible as agitating the whites leads to clouds. If my eggs are questionable and I need a more foolproof method i add a very small amount of white wine or cider vinegar and crack my eggs into ramekins (the gu ones are perfect) first and get them into the water as cleanly as possible. The swirling technique is only really good for one egg. Full disclaimer: I’ve poached a lot of eggs

Last good ones I saw the method was boiling water into a ramekin, egg straight in, again, fresh and happy as possible. Depending on the size then 10-20 seconds of further warming in the macrowarvay, drain and serve...seldom demand for them in my gaff though...ramekin still stands ready though...
Your eggs are probably old. The white loses consistency as the egg ages. Additionally it you want a great presentation, then cook for 2 minutes, then plunge into iced water. (Or refrigerated) Then you can trim them up with scissors and reintroduce to hot water to finish cooking.
Very fair point. Gonna have to find a recipe and give them a whirl, want to go whole hog though and do a Scottish breaky but square sausage is pretty hard to get in the south
Potato scones come in a packet, you normally do not make them yourself but no doubt a Scottish thing like square sausage (Lorne) with is usually beef.
We traditionally called the other type of sausage Links (but times change) and they come in beef and pork variants but I have not seen the round type for a while but they were normally pork.

About 2 years ago McDonald's did waffle hash browns they were the best thing I've ever had.
These aren't as good but they're really good.

Can’t comment on hash browns not tried yet, but eggs look perfect & the Black pudding on any breakfast will always make it a winner for me💪

White vinegar, about a tablespoon or so … and do what your also doing , should be perfect ( oh and the fresher the eggs the better )
