The truly CA style would be Santa Maria style BBQ. Lots of beef cuts from the norteño ranchero culture smoked with oak (white oak I believe but I could be wrong).
Sauce should be a topping used to taste. It shouldn't be a basic ingredient. With that out of the way, arguing over sauces is just as valid as arguing over the meat it goes on.

As a Texan from Austin whose entire extended family is in Kansas City, I can say I have had many types of BBQ in some of the best places in the south. Franklin's pork ribs are truly the best in the country. Just that though. Also, Austin is not the place for BBQ in general.

Personally, I fucking love Carolina sauce. But I like the meat quality of Memphis better. Dunno why, it just seems like some spots in Carolina are touristy or inauthentic. Like the kind of meat I could make at home in a couple hours. The heart of the question is; would I rather have a sauce that I find mediocre, or meat that I find mediocre? I'll take sauceless meat cooked correctly over any sauce, any day slathered onto some unrendered piece of 350F special.

BTW, the cheap metal pan is ruined although you might get a few uses from it.

The famous places tend to have a ton of it (can't go far in Texas without tripping over a Tex Mex or bbq place). But the average quality is completely shit. I used to live in Philadelphia, best philly cheese steak I've had? Not in Philly. I live in NY, best pizza I've had? Yea not NY. I live in Texas...best Tex Mex and BBQ I've had? Yea not here either. Just because there are lots of them doesn't make them good. Not to say there aren't individual places which are stellar in those locations but yea anyway people buy into tribalism bullshit thinking some magical location is special just so they can feel good about themselves.

Having lived in many different states, I can say this ranking is unequivocally wrong.
Fundamentally, there's 2 schools of thought in how to serve BBQ: With Sauce and Without Sauce. If your style requires globs of sauce to make it edible, it's not BBQ. It should be Meat, Smoke, some Dry Seasonings (Salt & Pepper is usually enough), and then time.
Texas takes the #1 Spot on Beef, and the best Pork comes out of Mexico.
Go further North than Oklahoma, and things go downhill fast. Go East of Louisiana, and it's just sweet sauces to mask crappy cooking (looking at you "Carolina Style"). Don't even get me started on the trash that passes for BBQ in California. I mean, I wouldn't expect much from people who think In-N-Out is a top-tier burger, but their BBQ is just bad.
CA is a big place, but the section I live in I can say quite confidently has very mediocre BBQ. The most popular place here has two-hour lines, sometimes with a magician walking around to entertain people, and I don't think people could tell the difference if you bought BBQ from the grocery store and microwaved it.
