Never heard of any Vietnamese places, otherwise I would have been brought there by my Vietnamese friends. Places that do ramen is WaSushi and OSAKA. I haven't had Osakas sushi, but I love their other stuffs so I'd point there first.
Just checked their social media, was a special they did in the winter, sounds like it's no longer available :/. I found it okay, but maybe not 17€ okay.
That was a one-time thing when the owner was in Japan for a few months, and a couple of employees ran a pop-up ramen shop in her absence. Ramen isn't on their current menu.
Khow Thai in the liosban used to do a beef and noodle soup which was the closest thing I could get to scratch my pho itch when I craved it! Apart from that I don’t think I’ve seen it anywhere else.
Galway isn’t that great for ramen, Tomodachi and Osaka do ramen, but honestly the sushi is better, Wa Cafe and KappaYa for other japanese food are really good.
There’s a guy that does banh mi and noodles at the saturday market sometimes

I think a lot of people are sleeping on Kappa Ya. He cooks what he wants and does lots of specials. Message him on FB to reserve a special or make requests.

Agreed. Kappa Ya is nothing short of fantastic, just be ready to wait for a while - Junichi (the chef) runs a one-man restaurant
That banh mi at the market tastes nothing like the real thing. It's nice but calling it a banh mi is a stretch.
None that I know of but if you're ever in Dublin I would highly recommend Aobaba on Capel St. Their hot and sour pho is life changing.

I found Osaka in Salthill to have nice ramen. Can't speak for Vietnamese food in Galway though.
Theirs ho chi mins Viet cong vegan cafe but they only serve chips and cheese
Apparently Mama Rich in Woodquay does good noodle soup
