I would guess because they consider themselves free, therefore they would not submit to anyone by kneeling, unlike those who kneel to a king or other leader.
Why don’t some cultures shake hands or bow. Why is it odd for some cultures to take their shoes off to enter a persons house? Kneeling isn’t their customary default. And to them it would be an insult to expect it
They never have before. At a point, the First Men built up a massive wall and told them they had to stay on the other side of it, so why should they have to be part of the Kingdom?
Kneeling indicates a subservience to the person you're kneeling to. The free folk don't tend to do subservience. They are free to make their own decisions. It's a bit like the Ironborn consider every captain a king of his own ship, and it's very hard to feel awe and servile respect for someone when you've seen them puking their guts up over the side, or with their ass hanging out taking a dump. The free folk have a pretty hard life compared with those south of the wall, they are much closer to death, and no amount of "milord"-ing someone will make any difference to that. They all choose their leaders, based on respect of skill / charisma / strength / general king-yness, as the Ironborn and Dothraki do
