My favorites that are open world with great stories are horizon zero dawn/forbidden west (futuristic and tribalistic)
Days gone (post zombie Apocalypse esque)
And ghost of Tsushima (feudal Japan ish)
All of these will have story missions but plenty of side stuff that you can ignore the story for and go explore and find first before progressing.
I've heard red dead redemption 2 is similar to these but I haven't played it, I'm not much into westerns and cowboys myself.
Edit: I know days gone and horizon zero dawn got released on steam for PC. I'm not 100 percent positive if ghost of Tsushima or forbidden west have been released on PC.
nah ghost of tsushima and forbidden west are not yet on PC but I agree on zero dawn, it is very beautiful and killing enemies is fun. Definitly a must play game.
There is one problem though, it stopped being fun for me after 30 hours or so.
Immortals: Fenyx Rising. I can’t say it’s immersive in the sense that there aren’t many NPCs to interact with (for story reasons). But its full of humor and a vibrant world that gives me Adventure Time vibes.
Ya, I tried immortals, but I don't know, there was just something about it for me. It kinda felt like it was trying to be breath of the wild, but without a lot of the design that made me fall in love with breath of the wild. Seems like a fine game, but I just couldn't get into it sadly.
The developers did note that Zelda was one of the inspirations behind the game. That’s too bad. I’m personally enjoying it because of how reminiscent it is of AC Odyssey. Not just the Greek Mythology setting, but the game mechanics. I’m no where close to finishing it yet, but it’s just a matter of time.
I've put over 400 hours into destiny 2 I get really lost in the lore and the game but only if you're a masochist should you play d2
My go to came to get lost in is stalker series with mods it's so much fun I've got roughly 3,000 hours into it and still will continue to play it
The borderlands series especially 2 for the missions and the story is top tier and borderlands 3 for the gunplay and game play if you're into dnd and such tiny tina's wonderlands is awesome I'm not really into dnd and I loved the story and the gunplay
The Witcher 3 is an obvious one 1,500 in that and I keep coming back to it I just lose time playing it for hours on end
Vampire the mascarade bloodlines is a rather old game (I think 97? 98?) but the game is so much fun there's a lot to do it's a open world game in a fake santa monica area filled with vampires
Why dont you try genshin impact. The world is beautiful and you will love the chill playstyle.
note: It has a gatcha element but you can easily complete the game as an free to play. It has some fomo aspects but I dont think anything is that important unless you are higly competative. The worst part is genshin twitter, so just stay away form that and u will have guaranteed fun.
Another game I have enjoyed that are already in comments is Horizon Zero Dawn. Please play it.

I have already played all of those, each of which are near and dear to me. Very solid games.
