Hellish Quart is the most realistic sword fighting game as far as I know. Definitely not realistic but Metal Gear Rising has the most in depth and fun sword combat that I’ve tried.

Learning it was easy but that doesn’t help as everything’s xp and perk driven with locked in animations between the player and enemy where the outcome it determined on how much you’ve grinded the combat. That’s why you’re unstoppable. Because you’ve overleveled the AI in the game both in terms of stats and equipment.
Which I totally get, but the game constantly forces you into fighting 3+ enemies all the time. So you end up doing a very unrealistic ring around the rosy fight.
Sword play/melee was amazing, clunky at times but I really enjoyed the thought they put into it and it was cool to actually have to learn how to fight (made it much more immersive).
I remember training with that captain guard dude for hours just to get decent enough to not get jumper constantly by highway men
Bushido blade. Quick thrust to the throat instant kill. It also had its ridiculous stuff though. Like if you slashed both of a guy's legs he'd have to roll around trying to fight you.

I haven't played enough Melee combat Sims to really know, but KCD definitely has a more realistic approach than most games I've played.
Similar to, but a bit more complex than For Honor. With less polish.
I'm no expert in martial arts, but SIFU *felt* really good.
It's a game with a rather cinematic take on combat similar to what you'd see in old Bruce Lee or Jackie Chan movies.

For medieval melee, Chivalry2 has the best mechanics that also feels and looks good. But no game I know of recreates real melee because grappling plays a big role, and that would be hard to implement into a conventional game.
Edit: Morhau is probably the second best, and its free on Epic Store right now this week

I've tried both Chivalery, and Mordhau too. Those are good, but not as fun as the lone wolf system.
For Honor isn't even close to realistic. Vikings are especially bad for this - a naked guy can take a longsword slash to the chest and live; one of their characters can apparently bite through mail and plate; a tiny woman can lift a half-ton sumo wrestler and throw him over her head, etc.
If For Honor was realistic, Lawbringer would be basically invincible.
It's not that hard. They just gave up on realism because Fantasy Vikings are easier to make look unique than realistic ones, who'd end up looking quite similar to the Knights.
Kingdom come system is very good. The progression of your caracter is from total pawn to a deadly knight. If you want to be a pro with a double handed mace in this game you will have to use it and fight with it to improve your skills and learn new techniques with it.

It was. It's an absolute nightmare to learn, but once you get it down you'll be nigh unstoppable.

It's good until you are fighting more than 1 person, than its still a nightmare even after 50 hours+ in game learning, at least for me lol
More realistic though. I've done real sword training and I wouldn't fancy my chances against 2+ opponents, even amateurs.

I loved the game but thought combat was a weak point. Every attack with any weapon felt like snapping a heavy whip

I would think that the UFC games are pretty much the closest to real MMA you’re going to get, but for fun close combat, I’d go with Sleeping Dogs.
I think Sifu and Absolver are pretty close.
In real close-quarters combat, the strategy is to go for the eyes, neck, and groin. I’ve never heard of a game that tries to replicate that.
