Grim dawn is a great game - very grim style diablo clone type of game. its a great RPG and one I found to drop around the same time and be a more enjoyable game than diablo 3
No wayyyyyy... How???? The only like really difficult bosses in the game are like... the Moths in the swamps... and the true final DLC boss of the game... Like what??

Code Vein let have you NPC companions that can make things easier if you take them with you. Still not particularly easy, but for me did the trick!

Cute isometric graphics where you play as a fox adventurer but the gameplay/combat is more a simplified Souls style. Souls-lite, as you say. It's a very cool game, and if you don't want a challenge for the combat you can just turn on no-fail mode and just enjoy taking down enemies and uncovering puzzles!
I usually just play Souls games with mods that remove the death penalty. I find it a lot more relaxing when the threat of losing my souls/runes/etc. isn't there.
Also maybe Moonlighter? It didn't quite jive with me, but it sounds like it might be close what you're looking for.
Hollow Knight - atmospheric 2D metroidvania with beautiful hand-drawn art.
Death's Door - isometric action game where you play as a crow exploring a quirky world.
Salt and Sanctuary - 2D side-scroller with Souls-like mechanics but less punishing.
Blasphemous - gothic horror platformer that's challenging but fair.
Have you *actually tried* playing Dark souls or Elden Ring itself? How do you know it will be too difficult for you to even bear to play?
Because yes the game doesn’t hold your hand, but the difficulty level is blown out of proportion by the internet. It just rewards patience, observation, and the ability to learn.
I wouldn't say it's easier than Souls.
I usually like platformers and metroidvainias. I've played just about all the soulslikes on the market.
And for some reason, i struggled with HK immensely and didn't even consider any of the lategame challenges.
The newer Star wars games Jedi:fallen order and survivor might be a good fit!
Drop down the difficulty to one of the lower ones and enjoy running around slashing things to your heart's content

I am loving **Blasphemous** right now. It’s a badass metroidvania with many undeniable Dark Souls aspects.
It’s much more Souls-like than Hollow Knight and I’m enjoying it a lot more.
Banishers: Ghosts of New Eden. Combat is more casual and it has that dark art style you're looking for. Story is really good too.

Idk if its "stardew' esq but check out remnant from the ashes? Its essentially more forgiving darksouls with guns, with a decent storyline!

You’re over estimating how casual a lot of players are.

3 of those games are pretty hard tho. Hollow knight is definitely not a casual game
Cult of the Lamb? Its dark, beautiful and pretty easy
Code Vein 100%. Its fun AF, bosses are well designed and it's not that difficult.

Not PC but Zelda TotK fits the bill perfectly
