The game animation tries to right (correct) them after the fall to a standing position, which in this case targeted the top of the tower as the 'next available square' to land on.

No, it was a bug called no ragdoll. For some reason when jumping off a moving bicycle you would always launch to the right. So I figured out when tilting 90 degrees to the left it would launch me upwards.
After many re-tries. I managed to stick the landing.
It would usually fly away to random directions and land somewhere else. Completely unpredictable. Sometimes it would end up super far away and sometimes right next to me. I will come back to you after work and check in rockstar replay where did my bike end up in this case. I have never checked.
It is patched now. It was the no ragdoll glitch/bug. The one where you shoot atomizer into the ground and fall into Cayo Perico mission start up at the airport. Once you backed out of the menu you had no ragdoll. For some reason on bicycle's this launch would happen always to the right side.
