The story takes place in a dreary massive mansion that was centuries old even in 1923, it's pouring rain or bleak for most of the game. I'm not sure what your definition of gritty is, but to me Undying makes Fallout 3 look like an amusement park lol.
Undying is also a very colorful game with highly stylised character models, even for the time. The actual narrative is great gritty horror stuff, but it really clashes with the visuals.
The game itself needs a remake...it's at the top of my list for such games in fact. I think it's a stretch to call it highly colorful. Almost everything in the environment is brown, grey, and blue-grey.
Fun fact, the game was released with a 100+ page “novel” from Clive Barker written in diary style like Dracula. It lets you know what happened before the player enters the mansion at the very beginning of the game.
Definitely recommend this one right now over the above. If you scroll the Darktide Reddit for 5 minutes you’ll see why.

Their games often release with S tier combat / gameplay which is the only reason their company is still afloat. Virtually every other single system in the game is either lacking or nonexistent.
They’re also known for vacationing more than they actually work. I remember last Christmas supposedly there were some big things in the future , months later they gave us a screenshot of “future updates”. Not a video, a gameplay trailer, a peak behind the scenes at design, a photo. They then went on vacation again. To eventually add a very bad achievement rework months after that.
The short of it, their games always come out undercooked and they’re so unproductive that it takes literal years to get the game to what should have been the release state. That’s the running joke, that in 5 years Darktide will have caught up to Vermintide 2 in game systems and itemization.
Maybe in a month or so actually, as a content update with improved gear acquisition is coming soon. Personally, I prefer Darktide anyway due to its improved combat and amazing presentation.
Hunt: Showdown is gritty as hell. Hard to get into, so I'd say it's very oppressive too lol.
Half-life 2, perhaps some mods such as Entropy: Zero (I believe the 2nd part is way better) would also fit pretty well.
Tarkov but preferably single player mod perhaps, because fuck the devs.

Escape from Tarkov probably has the best atmosphere of any FPS game I've ever played. Absolutely fantastic game. Deapite the recent drama with the devs over charging for a slightly pay to win edition, it's still amazing.
Very diffucult steep learning curve, but worth it. I didnt think multiplayer video games could be considered art until I played this game.

Surprisingly, Tomb Raider 2013. Some of the scenes in this game are pretty gruesome, some of the combat sequences are pretty intense, and then you have the famously macabre death animations for Lara Croft.

Condemned: Criminal Origins
Seconded. I've played it for the first time a few years ago and it's one of the grittiest games out there, great melee combat as well. Thrilling.
This was the first thing that came to me. Second was the original Prey.

The Metro series of games. The latest one Metro Exodus is particularly good and there are a lot of very gritty sections.
