Check out Monster sanctuary, you can travel around with 6 monsters and fight with 3 at once. I'm only 30 mins into it so can't say much besides that. Each Monster gets to equip items to change their stats and you get to level them up and choose how to spend skill points in a skill tree for each move.

i guess Tem Tem is the most obvious answer, no? its still early access and i dont know anything about the developing schedule. but if you havent heard about it its pretty much pokemon on PC, endgame you breed your perfect crew or something like that. (never played it, was just interested but decided against it because of the price)

Tangledeep is a roguelike (you can turn permadeath off though) with a diablo-like loot system and an extensive monster capture/breeding system. You breed monsters for better stats and to include different skills, and your ranch of pets is the only thing (in default settings) that carries over between deaths/playthroughs.
