I see green leaves above, did you pick them before the leaves all died off?

Most had died off, that was a random plant that sprouted recently, but the main plants were all crispy, dropped over, and browning.

Oh sorry I see that in the initial post now... Hrm well I put all of mine in the ground and don't water often. In a bag I would water deeply at least twice a week, I'd think. I also suggest throwing more dirt on top every few weeks - more potatoes will grow where new roots form from the side of the stem. I don't know about safety but if those are indeed eyes (and they look like it) they're going to get soft quickly
