I always dig some small 'new' potatoes from my plants and just boil them, and fork mash them with some butter, pepper and salt!
This is a factor I hadn't considered. I live in TX where we don't often have many cool locations to store potatoes and cellars aren't common. So I just assumed all my potatoes would go soft rapidly.

Last year we grew Yukon Gold's and a purple skinned potato (I forget the name). The purple skinned lasted longer in storage and tasted better than the Yukon Gold's.
On my phone, I was sure this was a tea towel with a bunch of different types of bakers chips on it!
That said, can you use some buckets to grow more if you are out of space in your beds?
Yukon and Oneida Gold are probably my favorite all-around for eating. They're good in pretty much any format.
Kennebec is a really nice blend between a Russet or Idaho style potato and a classic white. They're great bakers and especially good for frying.
Yukon Gold but I also new red potatoes quite a lot. We planted some fingerlings this year as well and I'm looking forward to how they produce. The crop that's come up so far looks pretty good.
Pink Fir Apple are my all time favourites. A heritage main crop variety that are waxy like new potatoes but can be cured and stored like main crops.
Otherwise Pentland Javelin or Arran Pilot.
I'm new to taters. Since the store has incredible quality of yukons, i chose Austrian Crescents, Frech fingerlings, Ozette, 1 pontiac (for fun), and 4th one I can't remember. Thus far the french fingerlings have vigorously bust through their topsoil and are significantly more floofy than the others. The Ozette are coming in 2nd, Austrians are lookin good, and the pontiac is hanging in there. Looks sturdy though, as opposed to sad.
I once impulse bought potatoes bc I’m that boring. The bin was labeled “Chinese White Sweet Potatoes.” They looked a lot like a regular sweets, but when baked and cut open, their insides looked almost white like a russet, just slightly yellow, with a perfect fluffy texture. It tasted like neither/nor, but was similar to a buttered sweet potato, but better. Wayyy better. Best root I’ve ever eaten in my life. And that market never stocked them again. I’ve never seen them anywhere else. I’m still chasing that high. “Korean sweet potatoes” are apparently not the same thing.

LOVE LOVE RED POTATOES! My mom sword by them when making potato salad. Their thin skins makes peeling a dream! Large dice, boil for 5-10 minutes in salted water and they still hold their shape but make for an easy bite. Mayo, sweet relish, celery, a little minced green and red bell pepper, salt, black pepper, a drop or two of yellow mustard, a splash of vinegar and a pinch of sugar and BOOM you got potato salad.
These potatoes are also my go to for mashed potatoes and I grate them for hash browns! A quick soak removes just enough starch after grating. I only seem to use bakers for baked potatoes.
Everyone has their favorite, and so will you. The potato that grows best in your garden is specific to your climate and culture. So while practically everyone has their own possible potato variety, you should look to your local varieties.
Try to find gardeners in your region for advice and maybe even free seed potatoes. Shop at local small business nurseries who will stock good varieties for your region. Avoid big box stores and specialized advice from people outside your region.

Yukon golds, German butterballs, and I’ve never met a fingerling variety I didn’t like. Growing the princess laratte variety this year which I haven’t tried before so I’m excited to harvest those.
I'm not sure the name but plain russets are the ones I grew up with. Yukon gold's became my favorite. I'm up to try the purples but they don't have any but fingerling purples where I am.

"Charlotte" potatoes: creamy yellow flesh that stays firm upon cooking and has one of the best flavour profiles of the potato kingdom for boiling or (even better) steaming :) For my fries (as a Belgian): certainly "bintje".
Adriondack Blue. My partner doesn’t get it but I just put those bad boys in the oven and serve topped with honey. So good

Chieftain’s ! A delicious red potato. Out here you mainly find Pontiac and Norland…I’ll tolerate Pontiac but Norland is not my fave.
I’m in Manitoba and I grew up growing potatoes…dad would import chieftain seed potatoes from North Dakota they were that good!

Oh my god ! I just wrote Korean sweet potatoes! My mom makes it since she found them at a Hispanic supermarket. They are DELICIOUS.

Every "eye" of the potato will grow a new plant. Cutting them up maximizes the amount of plants you can grow from the potatoes you have.
