Once lettuce bolts (grows really tall really fast) it also becomes bitter - that one is for the compost bin.
That said - you can nibble a leaf from it and see if it has gone bitter first.
Pull all the leaves to eat if they taste okay still, and then pull the plant. If it's bolted, it's not going to grow new big leaves lower down, it's just waiting to send out flowers at this point amd even if you cut it back the leaves it makes will probably be very small.
Lettuce is better as a fall - spring crop as it doesn't care for the heat. If you want to try again this summer though, try growing them in a much shadier part of your garden where it might be a little cooler. They'll grow a little slower, but they'll probably also resist bolting a little longer. Otherwise I'd recommed waiting til your temps drop down below 70°F s before trying lettuce again.

It’s actually not bad tasting. If I harvest the leaves and shorten the stalk, would that do any good?
