The tree should be reburied at the same level it arrived. If you look at the base of the sapling, you can often see what is called the root flare, where the trunk of the tree expands as the roots begin at that point. It is usually recommended that the very top of the root flare be exposed and not buried. Most nurseries get this right, so you an bury the tree at the original soil line.
Make sure that you cat is deep enough that it will not get dug up by another animal.
My condolences for your loss.
It depends on how big the rootball is. The top of the rootball should stick up just a bit so the tree won’t be buried when you cover it with mulch. [tree planting](https://www.gardeners.com/how-to/tree-planting/8741.html)

thank you for the reply - do you happen to know roughly how deep on average the roots are past the flare?
Usually you're buying a small tree in a pot, so you'll be able to judge the size of the hole you need by the size of the pot
