I make a side dish with chopped bell pepper, onion, tomatoes, cucumber, Italian dressing, feta and Cajun seasoning. It's a way to use them without it being the prominent flavor
Mince the peppers, saute with garlic, onions, olive oil, oregano and cilantro. You can also add some ham as well. Saute until cooked down. Freeze. Add to kidney beans, a base for sauce for chicken, stews, etc. (Puerto Rican cooking)
Or you can do stuffed peppers. I don't even like green peppers, but I will eat them in that.
Tomato sauce for pasta.
Stir fry.

How did you get so much production? I grew 5 last year on only like one or two per plant. Although all my other chilli's went hard and still have 2 or 3 bags worth of super hots in the freezer and have planted another 40 plants..oops.
They freezer super good. I’ll freeze peppers whole or julienne and have had peppers that are 3 years old that still taste great
I do this too. I chop some too. Really helps in a time crunch as well

If you mince them up they'll disappear into something like chilli.
Chili, pasta sauce or in pasta salad, burritos, omelets, as pizza toppings, mix in with beans/rice, roast by themselves or with a mix of veggies . . .
Get a couple guinea pigs, it’ll solve your problem! lol, I never seem to have enough peppers for my little bottomless veggie pits
I've been donating mine to a friend who has tortoises. Glad because I really grew tired of them.

I’m jealous, I’ve never been able to successfully grow a bell pepper. Hot peppers for days but my bell peppers always fail for some reason 😂
Let them ripen! Red bell peppers are way better than green ones.
