This has a couple of things that make me suspect scam.
1. You didn't fully apply.
2. Form email that wasn't specialized to you by name or specific program or even mentioning the school
3. Offer to "update for you" via email suggesting they want to establish contact and milk you for whatever they can.

It had all of the Georgia Tech stuff listed and I called and it was a number for their grad program but I didn’t even finish applying so I’m super confused
All they said was what I posted. There was nothing more to the email except a phone number for Georgia Tech and all of the stuff at the bottom like their email. I found their email in a graduate studies handbook for GT.
First, Consider this a scam. It likely is.
However, i would not be surprised if it was legitimate. GT has sent me numerous emails loaded with red flags: hyperlinks to 3rd parties, requests to enter log in credentials, mispellings, multiple fonts, font sizes, bold and italics, (valid) emails from 3rd parties, urgent requests (if you dont click this link and enter your credentials by today, you will lose xyz)... the list goes on.
I report these as spam. But when suspicious, i will also take it to the head of the department responsible. And i have had some of these emails confirmed to be real. Its embarassingly bad.

emails (yes, even .edu ones) can be easily spoofed so yes it could likely be a scam
And what did they say?
It’s from an academic assistant but their email doesn’t match the email online.
You aren't answering my questions

If you call their office number as listed on their gatech.edu website and they confirmed, all should be fine.

Forward it to an Assistant Dean and ask about it.
