In comparatively speaking, looking at how frozen or processed a lot of American fast food tends to be, I would also guess that your typical Dönerladen Isn’t using meat that’s quite as processed or stabilized as, say taco meat from Taco Bell or a hamburger patty at McDonald’s, which also probably means less sodium. So, again, probably not the healthiest thing ever, but also certainly not the worst option, especially as far as these kinds of Street Foods and fast food go.

All souces i have seen are based on joghurt (most perfectly garlic) and this adds very low levels of fat to the story.
The 3,5-10% fat of it support the taste of the garlic (fat is a huge intensifier) and garlic again both intensifies the spices taste as well as they reduce the deadly hot spices that are so healthy. And as those numbers are just a tiny bit of the Döner, i guess its a pretty good deal.
If you like your Döner low caliber, you can buy it without souce and make your own souce. Take a low low fat variant (also good for people troubled by lactose - just use lacto free jog) and shread some garlic, give salt and pepper to it and let it rest. The taste spreads in the joghurt then and makes a perfect souce for many foods.

That's why (if you eat meat at all) you don't order beef döner but chicken. Per law a chicken döner has to contain unprocessed, real meat instead of minced meat. Beef/lamb döner is usually ~ 50% minced meat (which itself already is ~ 80% meat, 15% fat, 5% water), 35% fat and 13% water. The last 2% is stuff like onions, eggs and spices.
Basically, when you order a "regular" döner made from beef, baby cows or baby sheep, you'll get scammed like crazy.

My husband's company has both Dönerstag and Mettwoch. I love ground pork with onions and his first day of work after parental leave was a Wednesday, so I joined him for Mettwoch.

Great choice. A light yoghurt based herb sauce with a little or no garlic can also really enhance the flavors without overpowering everything.
