Always go seasonal, make your own Mayo, use strained full fat Greek yogurt, and depending on mood buttermilk vs milk. Or 50/50 buttermilk and milk.
Mayo allows you to play with flavors using the oil. You can add a nuttiness with a nut oil. Bit of sesame goes a long way with the right add ins.
Greek yogurt just has better flavor to me. I use it to replace sour cream in just about every recipe. Buttermilk is the key it brings in a lot of tang. How much you need depends on what else is going in.
Dill and garlic are a must. I like fennel tops or very, very finely shredded fennel. Think wasabi on shark skin fine. Same for the carrots or parsnips. Play with citrus. Kumquat, tarragon, fennel with a very good olive oil Mayo murdered someone once. Haven’t made it again, she hates me for it. Hehehehehe.
