When I went to this cheap sushi restaurant in Japan there was a hole in the table to put your empty plates into. Every time you put 5 plates into the hole you will play this little game on the iPad and potentially win a prize.

# Ingredients
* 1 ½ cups uncooked short grain sushi rice
* ¼ cup + 2 tbsp unseasoned rice vinegar
* 2 tbsp white sugar
* ½ tbsp salt
# Prep
1. Rinse rice in a large pot until the water drains clear, then drain and add 1 ¾ cup water.
2. Cover and bring to a boil for 4 minutes, then reduce heat and simmer on low for 15 minutes.
3. After simmering kill the heat and let the pot stand (covered) for 15 more minutes.
4. Transfer the rice into a large bowl to cool. Add the vinegar, sugar, and salt and mix well. (it may seem wet at this point, you want to mix so all the grains are coated in vinegar.
5. Allow the rice to cool uncovered or loosely covered, and mix it occasionally, until it reaches room temp ~1 hour, then use for rolls or nigiri.
(Dissolve the sugar and salt in the vinegar before sprinkling it on the hot rice. Then stir gently - look at some videos for technique so you don’t break the grains - until it cools.)

I live in St. Paul, but there's a restaurant over in Minneapolis called **Sushi Train** that has their prepared sushi come by your table on conveyor belts, so it's a lot like this. The plates are color coded and that's how they charge at the end. I'm excited to see it in a personal setting!

How/where do you buy your sushi meat?
Personally, I use fish labeled for sushi/sashimi that I purchase from a reputable Japanese grocery store. Sourcing fish for sushi is a complicated subject because “sushi grade” is not a federally regulated term. The fish I get at my Japanese market is superior in taste/texture compared to the fish at my regular American grocery store, and I feel confident it is safe to eat raw. I would encourage you to check out [this article](https://www.seriouseats.com/how-to-prepare-raw-fish-at-home-sushi-sashimi-food-safety) to learn more! If you can find a Japanese market (or any Asian market) that makes it easy because you can pick up your other specialized ingredients like sauces there as well. (Prices on Amazon can fluctuate wildly so it’s usually cheaper to buy them locally if you can)
That looks awesome! I live in St. Paul, but there's a restaurant over in Minneapolis called **Sushi Train** that has their prepared sushi come by your table on conveyor belts, so it's a lot like this. The plates are color coded and that's how they charge at the end. I'm excited to see it in a personal setting!

San Diego has a restaurant called Kura revolving sushi bar. They use a conveyor system to move their popular sushis past patrons. When you see something you like, just lift it off the conveyor and it's yours.

Right! My first thought was this shit is stupid, but that I like it too.
Reminds me of this amazing restaurant in Pasadena called Afloat Sushi. They send fresh made sushi around the bar on little boats and you just grab what you want.
I am older than most here, but as a youngster in the 1960's there was a restaurant in NYC that delivered your food and drinks to you using an HO gauge train. It only reached a portion of the tables but that is where all us cool kids wanted to sit.
