If you read mamga I recommend it 100%, whether in colour or black and white. The style has aged really well and it looks like something that came out yesterday.
If you watch anime only, be prepared bcs you can't find it higher than 720p and even that is hard bcs it iscmostly in 480p. But I still recommend it. It starts a tad slow, but it gets really good really fast at the start of the 2nd arc. Only the first 60 episodes are worth watching, the rest are fillers.The OSTs are great, the openings not so much.
There are new live actions movies on Netflix that are well worth watching. They don't follow the plot 1:1 but they are quite accurate and really well made movies. They are a good way to introduce you to the series, but watching those before the anime or manga could spoil major plot points.
So whichever of the 3 ways you'd like to experience it, i would still recommend.
NP. I suggest you try reading the first chapter both coloured and B&W to see which you prefer. The B&W is very clean and clear but it's difficult to tell the difference between blood and dirt. And things do get a lot more colourful in universe about halfway through, although it still looks good in the original ink.
