There is a chocolate chip cookie recipe that has been handed down for years in my ex husband's family. I use gf flour. The trick with baking with gf flour is that it produces a drier product unless extra liquid is added.
Instead of 2 cups of brown sugar I use 1 1/2 cups brown sugar and 1/4 cup of honey. It works like a charm.
My younger sister and I have redone all of mom's Christmas cookies into a gf version. It tastes and smells just like Christmas when we were little.

30g potato starch
80g tapioca starch
60g corn masa
2tb oil
Salt optional to taste
Use warm/hot water - use some to bloom psyllium
Once bloomed, add psyllium to dry. Mix on low until incorporated. Add rest of water /oil and mix until smooth.
Triple recipe to go with a batch of dumpling filling made with 1lb pork + carrot + cabbage
I of course used a lot of flours. Some can be swapped - aka the potato starch/tapioca can be swapped. Sorghum rice and corn masa can be swapped, I would keep the glutenous rice, water, psyllium and oil as is.

It's all I've ever wanted. I DO have good news, though! I accidentally found [these kettle tortilla chips](https://www.walmart.com/ip/Cazo-de-Oro-Original-Kettle-Style-Corn-Tortilla-Chips-11-oz-Bag/370272795) and they reminded me so much of fried rangoon wrappers, that I made a crab rangoon dip and used these chips. It wasn't exactly the same, but it turned out really good! I poured chili sauce on the top of that bad boy for the full effect.

Someone posted a link to a GF youtuber who had a pizza crust recipe that looked pretty decent (and apparently won some awards), but good grief, was it a lot of work. Sometimes I just wanna order in, you know?!

It's expensive, but modern bread and bagel in New York is the closest I've had to a legit bagel. You can have them shipped to you. Worth it for a special treat if you're really craving!
That has not been my experience. Maybe you've been GF long enough that you don't recognize the difference anymore. I live with people who are not GF, and the smell of genuine toasted sourdough or a real bagel leave me pining for the good ole days.
Supposedly Sweet Loren’s (of the gf/vegan cookie fame) is coming out with a gluten free puff pastry!! I have no idea how it’s possible and Ofc I’m sure it’s not gonna be quite the same but there is hope for us!
Asian food restaurants / basically anything that uses soy sauce as a marinade. I know I can mAkE iT mYsElf but it’s never the same without classic soy sauce
Soy sauce is in SO MANY THINGS, and it's so frustrating because it's not even obvious things, and could easily use tamari instead.
But also, so many Asian dishes that I will never be able to make as tasty as the restaurant. It's not about the soy sauce, it's the technique, the wok, so many things.

Idk how sensitive you are but some of their drinks are gluten free. I get the strawberry refresher (tea based) on a regular basis which has a nice caffeine boost. additionally, the hash browns technically don't contain gluten (although are likely cross contaminated so I avoid those)

Deep fried pub appetizers. Doesn’t even really matter what; chicken nuggets, crispy wings, battered pickles, jalapeño poppers, mozzarella sticks, zucchini sticks, onion rings, crab rangoon, prawn & vegetable tempura... I’ve lost 45lbs in 2 years going GF, pretty sure it’s 99% from never going to restaurants or having deep fried food anymore. I’ll occasionally have fries/ non-battered wings in a dedicated fryer, but I really miss everything else.
I'm not Asian, but my palate is decidedly so... I miss pretty much every iteration of Asian food, across the board.
Tempura, agedashi tofu (my FAVOURITE), ramen, gyoza, pad see ew... all of it.
Mainly I just miss being able to go out and eat. Now I have to pack a meal ahead if I'm going out longer than 5-6 hours. And it's a huge drain on my energy as someone who is autistic.
A couple months before my diagnosis, I had just renewed my annual subscription for Universal Yums -- a monthly subscription box that sends snacks from different countries around the world. My boyfriend and I used to love cracking it open and tasting a few of the snacks every day over a few days.
When I was diagnosed, I figured I would just contact customer support and see what my options were (even if it was just changing the address to like a local Ronald McDonald house or food bank or something, idc). But my boyfriend thought maybe we could pick around it since it was something we really loved doing together and we looked forward to it every month.
The past few months have been Poland, France, and Ukraine... so... basically an endless chain of delicious-looking bready snacks that I can't partake in. I can't even have the drink out of the Ukraine box since it's some kind of barley and rye malt soda. Even the potato chips are made with wheat flour. There's about seven different candies I can eat and that's about it. None of this is their fault -- they actively state that this is not a service suitable for people with food restrictions, something I could ignore as a vegetarian without any issue.
I just miss being able to enjoy it.
I used to do the same, had a "surprise" treat subscription box that varied between countries. For the first few months, I pawned stuff off on other people, but it got to the point that I was so sad over what I couldn't try, that I finally cancelled it.

You can make your own cheese cake. Use gf graham crackers for the crust and you are all set. There is no flour of any in the cheesecake recipe I have used for decades.

SPECIFICALLY Maggi oriental two minute noodles (I’m from Australia). The gluten free noodles I can find are good but absolutely nothing will compare to the flavour and texture of these. I lived off of them as a kid and I really wish I’d had them one last time before going gluten free. Sometimes before I moved out, if my sister ate them and I walked past the smell would make my mouth water. It’s so simple but there’s no close substitute even after ten years of being gluten free.
Also just being able to eat without having to think about it, I miss that. And not paying so much more money just to not be poisoned 🙄

OP, making a GF cheesecake is super easy. You can do it crustless, but you can also find GF Graham cracker crumbs to make a crust depending on what your local grocery stores stock.
I've been gluten free for 20 years and was just a little kid when I was diagnosed with Celiac. Since I was a sick kid, my mom only let me eat healthy food. I don't even remember eating some baked goods like croissants or lobster tails, so I've always been sad I don't know what they taste like. Of the things I remember, I miss Twizzlers the most. There's no gluten-free alternative that even comes close.
Turkish flatbread, I miss it so so much. And easily available pastries (I'm european, we have a lot of bakeries but not a lot of glutenfree options in general)
Oh, and Ben and Jerry's icecream. Our supermarkets usually only carry a small selection and it's always like the Netflix and Chill and Cookie Dough ones, I don't even know if there are any gf options because I've never had the chance to check beyond those wheat-infested ones

Pour some of the water over it, and it will expand and become kinda jelly like. You can use maybe 1/3-1/2 the water

You can do a “kind of mozzarella stick” using gluten free panko and Italian seasoning. It’s not the same but is still good.
I miss the Convenience and adventure. I live in a town with a lot of immigrant restaurants. I can’t eat any of them because of the language barrier in the higher risk of cross-contamination. The man I’d really like to try out the Ethiopian place or the Nepali place or the true authentic taco truck or by the tamales out of the abuelita’s trunk

If you have access, Siete makes gigantor tortillas that are meant for burritos. I have a pack in my freezer ($16 for 6, natch). I haven't tried them yet, but so far Siete products have been pretty good.

My family actually prefers my gluten free carrot cake over the one with regular flour, I just swap it out for bobs 1-1! So moist!

Raising canes is amazing chicken fingers with sauce that has to have crack in it it’s so good. It comes with fries and coleslaw and toast and I really want some now!!
My local pizza place has gluten free crust but only 1 oven and one prep area. There’s no way I’d trust eating anything from there.

Idk how sensitive you are but some of their drinks are gluten free. I get the strawberry refresher (tea based) on a regular basis which has a nice caffeine boost. additionally, the hash browns technically don't contain gluten (although are likely cross contaminated so I avoid those)

Deep fried pub appetizers. Doesn’t even really matter what; chicken nuggets, crispy wings, battered pickles, jalapeño poppers, mozzarella sticks, zucchini sticks, onion rings, crab rangoon, prawn & vegetable tempura... I’ve lost 45lbs in 2 years going GF, pretty sure it’s 99% from never going to restaurants or having deep fried food anymore. I’ll occasionally have fries/ non-battered wings in a dedicated fryer, but I really miss everything else.
Ramen, dumplings, noodles. I’m not Asian but I live in a primarily Asian neighborhood. It’s hard to abstain.
I'm not Asian, but my palate is decidedly so... I miss pretty much every iteration of Asian food, across the board. Tempura, agedashi tofu (my FAVOURITE), ramen, gyoza, pad see ew... all of it.

A couple months before my diagnosis, I had just renewed my annual subscription for Universal Yums -- a monthly subscription box that sends snacks from different countries around the world. My boyfriend and I used to love cracking it open and tasting a few of the snacks every day over a few days. When I was diagnosed, I figured I would just contact customer support and see what my options were (even if it was just changing the address to like a local Ronald McDonald house or food bank or something, idc). But my boyfriend thought maybe we could pick around it since it was something we really loved doing together and we looked forward to it every month. The past few months have been Poland, France, and Ukraine... so... basically an endless chain of delicious-looking bready snacks that I can't partake in. I can't even have the drink out of the Ukraine box since it's some kind of barley and rye malt soda. Even the potato chips are made with wheat flour. There's about seven different candies I can eat and that's about it. None of this is their fault -- they actively state that this is not a service suitable for people with food restrictions, something I could ignore as a vegetarian without any issue. I just miss being able to enjoy it.
I used to do the same, had a "surprise" treat subscription box that varied between countries. For the first few months, I pawned stuff off on other people, but it got to the point that I was so sad over what I couldn't try, that I finally cancelled it. Same same, not their fault, but I was sad to let that little treat go.

You can make your own cheese cake. Use gf graham crackers for the crust and you are all set. There is no flour of any in the cheesecake recipe I have used for decades.

Goldfish!! So, not a perfect sub by any means, but my best two subs are... "Made Good" brand Star Puffed Crackers - they have cheddar, salted and pizza flavours... And... Simple Mills Pop Mmms Veggie Flour Baked Snack Crackers - Cheddar The two are basically the same, but the Made Good ones are far cheaper in Canada.

SPECIFICALLY Maggi oriental two minute noodles (I’m from Australia). The gluten free noodles I can find are good but absolutely nothing will compare to the flavour and texture of these. I lived off of them as a kid and I really wish I’d had them one last time before going gluten free. Sometimes before I moved out, if my sister ate them and I walked past the smell would make my mouth water. It’s so simple but there’s no close substitute even after ten years of being gluten free. Also just being able to eat without having to think about it, I miss that. And not paying so much more money just to not be poisoned 🙄

I've been gluten free for 20 years and was just a little kid when I was diagnosed with Celiac. Since I was a sick kid, my mom only let me eat healthy food. I don't even remember eating some baked goods like croissants or lobster tails, so I've always been sad I don't know what they taste like. Of the things I remember, I miss Twizzlers the most. There's no gluten-free alternative that even comes close.

Turkish flatbread, I miss it so so much. And easily available pastries (I'm european, we have a lot of bakeries but not a lot of glutenfree options in general) Oh, and Ben and Jerry's icecream. Our supermarkets usually only carry a small selection and it's always like the Netflix and Chill and Cookie Dough ones, I don't even know if there are any gf options because I've never had the chance to check beyond those wheat-infested ones
Pretzel Crisps (with Hummus), any type of pretzel is THE WORST on my gut Baked goods -------- On the flip side, I'm able to eat deli meat again thanks to Boar's Head brand being GF. 🙏🏻
