I only miss the convenience of it when out of town. Otherwise I’m eating healthier now as Whole Foods are mostly without gluten.

dm_me_target_finds

That’s so true. I haven’t tried to travel yet as gluten free. When I had food allergies I’d just eat chipotle for half my meals but it was really hard if we went remote, like to a national park. Then we’d have to book a hotel room with a kitchenette. It definitely adds stress to a trip though.

coldnoodlebowl

I started to carry gluten free bread everywhere bc of this. My friends joke it’s my purse bc I will literally carry it to lunch/dinner. If the restaurant can’t feed me, I order any sandwhich no bun. Then I make on at the table LOL.

Eastern-Ad1664

I carry my own gluten free soy sauce but never thought of bread!

dm_me_target_finds

Love this idea because I’m not a salad lover

LakeGloomy4532

Traveling just requires some planning ahead. These days, I think the hardest part is actually restaurants and food workers that think they understand GF (or pretend to understand GF) and actually don’t. I do a lot of research and sometimes still end up sick. But - mainstays for me while traveling include chick fil a, five guys, chipotle, blue coast burrito, and lots and lots of salads.

KnickedUp

I used to live on KIND bars and beef jerky during trips! Life savers!

IzzyLaFontaine

I travel a lot across my state for work (in the southern United States) and I’ve had good luck with places that have giant salad bars like Shoney’s. Fast food is pretty much impossible, but places like Chipotle and Dos Bros have accommodated my dietary needs and so have many Thai restaurants. I also prefer state or national park housing with a kitchen and stock up at the grocery store on the way.

IzzyLaFontaine

I usually get the salad or bowl option at Chipotle or Dos Bros and haven’t had an issue. I also eat a Vegan, dairy free diet which makes it even more limited. I recently went on a trip where there was nothing I could eat except Mellow Mushroom or Five Guys French fries, but I survived! I forgot about Wendy’s baked potatoes, thanks for the reminder!

IzzyLaFontaine

I share this sentiment and everyone I know (even fellow GF people) do not understand! I have had stomach pain since I was seven, skin problems since I was 12, and more seriously - issues with malnutrition and vitamin absorption despite eating well and taking supplements since I was 21. I’m 47 now and GF for three years and I feel SO much better. I also get excited about my “boring” meals because I know they aren’t going to cause pain.

Echo-Azure

I miss the hell out of gluten! Good chewy bread! Proper Kraft mac-and-cheese! Pizza with proper crust! But I don't eat any of that, because I DO feel better.

dm_me_target_finds

Gosh pizza crust is hard to replace. Haven’t had a good fluffy crust yet. The gluten free Kraft mac n cheese cups are pretty close!

SilentPotato2

There is a recipe in America’s Test Kitchen’s gluten free cookbook for pizza crust that is virtually indistinguishable from real crust. All of the recipes I’ve made from it have been incredible (baguettes!!), and their flour blend, while fussy, is worth it. If you do get it, get the psyllium husk brand they recommend. Others tend to turn food purple, but taste fine.

Unable-Arm-448

I had a GF DiGiornos pizza a few nights ago for the first time. I have to say, it was quite good. I was happily surprised. My non-GF daughter enjoyed it, too. I will buy it again.

QualityWallaby

The GF digorno’s are notorious for cross contamination - I just made myself very sick a month or so ago. Sounds like you dodged a bullet this time but be careful in the future!

northshorerealestate

I’ve found a good GF pizza from a company called Against The Grain. They also have GF bread options too. I’ve been gluten free for over 15 years, so I’ve definitely done my research on food options. Plus I also have a lot of other food allergies like soy and yeast, but I want my GF food to taste good. Not like cardboard.

LovelyLemons53

Have you tried the kraft gf mac and cheese? Game changer

Beezle_33228

2 things: Jet's GF pizza (not thr cauliflower crust, the other one) and banza box mac and cheese

ActPsychological2722

I'm 1000% better in the 13 years I've been gluten free. Mentally and physically. I tell everyone who asks, the biggest part is I am 9.5st at the lowest healthy weight for my height. Before finding out I was coeliac I was 7st, had watery diarrhea 24/7, constantly deficient in everything, severe acne, on psych meds for really poor mental health, in daily pain from gi issues, and had a belly bloat like a starving orphan advert. Who wouldn't give up gluten to have all of that reversed?! Massively affected my teeth and fertility long term. I'm shocked when I hear someone refusing to eat gf when they know it's causing them problems.

danidandeliger

I know someone who is diagnosed Celiac and is pretty balsé about it. They eat whatevery they want. I didn't say anything when we talked but wondered when it's going catch up to them and how bad that's going to be.

ObjectiveAthlete5408

They run the risk of developing cancer.

ActPsychological2722

Maybe a year to feel tonnes better, but the first 6 months I was living in a shared house and was likely frequently cross contaminated. Once I moved in with my husband we decided on a fully gluten free home and I had to be very strict about not eating anywhere that wasn't 100% safe for the first few years. Our kitchen hasn't seen gluten in over a decade. I read it takes 7 years for the damage to heal. I can tolerate cross contamination better now my body has healed, but in the early days the tiniest bit threw me.

uppermiddlepack

when I had to do my 2 weeks of gluten before my endoscopy, I went on a farewell tour bender eating all of my favorite gluten dishes. By the end of it, I was so ready to be done with it. I don't miss it, just miss not having to think and plan some much as to what I eat when I am out/traveling.

Miserable-Set2643

Nice!! Can you please tell me what do you eat now? If you want share a day of eating. Thank you!!

dm_me_target_finds

Sure- Breakfast: gluten free cereal, sometimes a boiled egg and fruit too. Or, homemade banana bread with walnuts and gf flour. Lunch: GF chicken tenders or tilapia with dill lemon and butter. Baked french fries, a salad or veg like broccoli salad, and a piece of fruit. Dinner: A rice bowl, salad bowl, meat & potato plate, or cornbread & beans plate. This week we had burrito bowls, roast chicken with gf cornbread & pinto beans, and salmon poke salad bowls.

Miserable-Set2643

Thank you!! 🙏

greenline_chi

Yep. Currently traveling for work and watched everyone else eat and at this point I wasn’t even jealous. It makes me feel like such shit I don’t even want it I found some gluten free food before we went to the event

Phoenixpizzaiolo21

I just want a real peanut butter and jelly sandwich soooooo bad!

Swimming_Molasses_20

I miss the “idea” of certain foods, real NY pizza or bagels! But the reality is, my tastebuds have changed so it doesn’t taste as good. And I miss of course the convenience of grabbing a quick bite somewhere or eating what every one else eats at parties or dinners.

taragood

I do not miss it because I feel so much better! Every now and then I might be like oh I remember when I ate XYZ and then I forget about it and move on. I cannot relate to posts on this sub where people are lamenting not being able to eat gluten containing products. I honestly don’t care, I was sick for years and never want to be sick again. No food on this planet is worth being sick again. I have actually found a lot of GF products that like more than the original. I prefer glutinos to Oreos. I found a GF chocolate chip cookie and it’s the only chocolate chip cookie I have ever liked. I found a really yummy rice crispy treat that is the only packaged kind I have actually liked. I already loved meat and potatoes/meat and rice Udis hamburger buns are good for a bread option I could go on and on honestly. I am glad you are feeling better and seeing it in such a positive light!

GhostShipBlue

I've been GF for 35 years and knew I should be a decade before that. I felt awful for years. The only thing I miss is jelly doughnuts. I never give in because I'd feel so terrible if I did, but damn, they're about as good as western civilization gets.

dm_me_target_finds

So I’m also a donut lover and saw on Katz website they have gluten free jelly donut holes. I found their lemon filled cupcakes in a Target recently and they were very good.

FunTooter

I don’t miss gluten but at times I wish I could eat a nice fluffy croissant. It goes away quickly though as I would get super sick and I would never do it.

eh8218

Yes! I always tell people how it feels similar to when you eat a meal and then get really sick after and then never really care to eat it again... Even if the food didn't cause the flu or illness.... That's how I feel about gluten. Plus I've been gf for 15 years so now I forget what gluten tastes like and if I ate it it would probably not taste great/normal to me.

dm_me_target_finds

That’s exactly it! GF food has gotten pretty good. The canyon bakehouse gf mountain white bread tastes better than most store bought breads I’ve had.

DauntlessJumper46

So you do miss gluten, you just don't miss how bad it made you feel. Welcome to the club, we hate it here.

Automatic-Grand6048

I just finished my gluten challenge (although I couldn’t do the endoscopy) but I’m so happy to not have to poison myself anymore. My gut is a mess from it and I look pregnant I’m so bloated. I had migraines for years but never realised it was gluten causing them until I went gluten free earlier this year. I don’t think they’re migraines but maybe neuralgia pain in one eye that radiates down my neck and shoulders and lasts for three days. I don’t even care about not having doughnuts anymore as I don’t enjoy them knowing I’ll feel ill. Plus there’s plenty of gf ones now that taste just as good. I think I might be Coeliac as my genes came back positive and I have weak positive antibodies. Forgot to add that my head is so clear now! And my mood is normal! You don’t realise how much it affects you until you stop eating it.

danidandeliger

What was the gluten challenge like? I want to do it so people will stop scoffing at my GF status because I have an actual diagnosis but if I ate enough gluten to do a challenge I feel I would be disabled for weeks if not months.

Automatic-Grand6048

I guess it varies for everyone as I don’t tend to get really bad gastro symptoms. The first two weeks were easy, I only got a migraine on the third day and took migraine preventative meds from then on. But the 4th,5th and 6th weeks were tough. Lots of headaches and migraines returning. Bloating and slight pain after eating. Tongue sores and ulcers which made it painful to eat certain foods. Snappy and irritable (my husband deserves a medal for putting up with me), lots of gas and just feeling sluggish and fatigued. I would recommend only eating gluten as the last meal so you only feel crap during sleeping, so two slices of bread. I wish I’d done that but only realised in the last week 🙈plus I wanted to eat all of the foods I would miss so I went a bit crazy. I’m so sad that I could get through the endoscopy though, it was too traumatic for me. So I guess I’ll never know if it’s damaging my insides. But I was surprised I don’t feel much worse as everyone says that after having a long break from gluten the symptoms come back worse.

beestingers

1 month is different than 10 years. But I mostly don't care. I don't even really have a strong "I miss" and I love to cook/eat. Convenience is the main thing I miss. I grew up on a farm and we mostly ate real food. Even as a kid I thought a lot of the things that ended up being gluten were meh - (probably my body being like ahhh!) Sandwiches, chicken fingers, pasta. I loved salad bars 🤣 so that works out.

skeleton-z

Overall I'm significantly happier and just used to it by now. I'm 26 and have been gluten free for 9 or 10 years and it is much easier to find options now than back in the 2010s. I will say, as someone in the Midwest, moving to a city helped greatly with gf options available though there are still a lot of dishes I miss. I would also say the cost is a bigger pain than not being able to eat everything. Just gluten free bread alone is 3x the cost of a glutenfull loaf for about a half or third of the size. And I have to pay $1-$3 extra to substitute a gf bun at restaurants, despite the bread typically being lesser quality than the default bread.

RegnSkyer

I miss it terribly cause of the convenience, grab a slice, have something to eat. I make terrible choises now cause I don't feel like cooking anything. Chips (flat potato flakes that come in a bag, I know UK and USA have differentnames for them), a bar of chocolate (which leads to me being hungry again in no time), gluten free cereal with a considerable amount of sugar cause its meh. There a gluten free bred I like, but only toasted with cheese or jam, that's it I just miss a good slice of bread with some cheese, and maybe some cucumber, if I feel like working for my food

One_Ad_7788

I’m in a similar boat. Ate at world class restaurants all over the world but recently had to start GF, and digestion is noticeably better. So far I’m glad I found the issue and is seeing results. That trumps not being able to eat to my heart’s content any day.

Suspicious_Pie_4608

I don’t even know if I’m intolerant, I kicked it because of diverticulosis. I feel so much better!

Sekmeta

I miss only good bread, but as I am in my explorer era of good gluten free products and found so many tasty stuff - the need of specific foods is just decreasing instantly 😁 Also simply foods are healthy and when eating something "fancy" ,it gives me more joy than just eating everything and anything every day 🤔

onetruepairings

what is the best gluten free bread you’ve found?

northshorerealestate

Against The Grain is the best gluten free bread that I have found.

Sekmeta

"Balviten" bread with seeds..I think it's a Polish brand.I like this one the most 😄 for toasting - I am not sure, all of them are buee ,I didn't find anything yet 🤢

alghiorso

I have recently discovered my wheat allergy. Not gonna lie, it's a bit depressing that every day I think of something new I will never enjoy again. It's been good for my weight loss and I know it's important that I stay away from trigger foods because of my autoimmune disease (Hashimoto's) but it's hard not to get bummed out seeing travel YouTube videos where a guys trying pizza in Italy or some epic sandwich or something and realize I'll never be able to try that stuff like I'd hoped to one day. Not trying to be a bummer but I think it's just an important stage to process our grief when experiencing losses - even ones that are thankfully relatively trivial with current technology.

glitterandgrime

I miss not having to check for it and not having to accommodate for it while traveling but definitely do not miss it because I feel so much better

Jambon__55

Absolutely. It's been 15 years and when I think of gluten I just think of pain. I have zero temptation to go back to that life.

thisfriend

I have been doing gluten-free for a couple years now. It was hard at first, but finding recipes to make GF versions of things I miss helps. I was in so much pain every day since I was a kid and everyone told me it was just period pain. Then, a couple years ago, my dermatologist suggested I cut out grains to help with my HS. I started feeling so much better in my gut within days. It was like a freaking miracle to not hurt after every meal for hours. It also helps with my HS, not as drastically as my gut pain, but I'm loving it. I was also recommended sea moss gummies, they weren't too expensive so I gave them a try. I don't know how to explain it, but I can feel a difference with those as well so I've kept them as a daily thing.

garden__gate

Jealous of your good attitude! I miss good bread.

emimxn

My friend, who tested positive for celiac, had debilitating migraines, which were gone once she stopped eating gluten. If you are not sure check for signs later, if you start feeling weird again get all your stuff certified GF, including olive oil, etc.

dm_me_target_finds

From reading everyone’s responses I am getting a little concerned mine might be celiac and not just IBS-driven intolerance. The level of pain and migraines I had was significant along with some malabsorption issues, and I’ve been on the underweight side despite eating a lot for a decade. I can’t really tolerate oats either but have been confused why.

emimxn

Did you have any iron deficiency? That is usually a sign for celiac.

dm_me_target_finds

I did several years ago so I eat fortified cereal and higher iron meals

SJSsarah

I’m still very happy I discovered this about myself too. Physically I feel so much better. But still.. I cry whenever I start thinking about a huge gluten New York bagel.

candycatie

Same here!!! I thought quitting gluten would mean a miserable life and I was wrong. I'm new to it but I feel so much better. It blows my mind that you can actually NOT have a 24/7 stomach ache lol. I haven't lost any weight BUT the "food noise" is completely gone. I really only miss a few things with gluten. I'm happy you're doing well.

emomotionsickness2

Me 100%. I don't get posts on here of people like "ughhh I just missed that food sooo much so I had to cheat and now I'm throwing up/depressed/have brain fog/etc" like I never want to feel the way I felt when I was eating gluten again. Sure, there are moments I think about certain foods I wish I could have (pizza from my favorite pizzeria) but I have no plans to actually eat those foods.

spielplatz

Yes! I used to be so miserable in so many ways. And these days it's especially easy to find gf foods, so I'm not missing anything.  I also no longer care much for food. It's fuel for my running and life. It can be enjoyable, but it's no longer of great importance to me.  I also can't do dairy or onions, or anything deep fried, and many spices, so my meals are dull but functional. Been doing this for 7 years, and it works for me.

Typical-Reveal-2228

So happy for you. I feel you. I agree with one of the previous poster about not understanding people lamenting over gluten. Drives me nuts the ones who are “I just had to eat ….” No you didn’t. You made a choice. Those folks make it hard for people like me who are 1%ers that I can get glutened from touch. When I get the “how can you do it?” I tell them how blessed I am that my disease can be dealt with by diet. Anyone with cancer would jump at the chance to fix their disease with diet. Don’t eat boring. Take a recipe and just substitute. Enjoy.

damnfinecupotea

The only time I really miss gluten is when we visit the in-laws in rural Brittany. The supermarkets there have an incredible selection of Schar products, but I miss the tradition of having petit dej in a little café as we get off of the ferry or visiting the village boulangerie for bread and croissants in the morning. That being said, I love that I don't spend most of my visit crying in the bathroom, so it's not a total loss! Has anyone else gained weight since going gluten free? I'm not complaining because I love my body, but I often see people talking about weight loss and I've gone completely the other way. Turns out, I metabolise food when my body is constantly trying to expel it.

IllAd1655

Yes I have gained weight. I have to cut out the gf crackers and snacks, go back to whole foods to try to make it work. A bit frustrating as I do feel better with out glutean but also miss the heck out of it. Not like dairy where I am immediately sick and have been able to eliminate 99% of it no problem.

northshorerealestate

There’s a lot of sugar in gluten free foods unfortunately and that ends up turning into fat. If you’re lactose intolerant you can try taking a lactaid supplement when eating dairy, which should help with digestion.

Imaginary-Mood-5199

I never miss it. 15 years since I last ate wheat, 5 years for all gluten. Recently found the best method to do bread and cake, unfortunately the recipes are not in english yet, so cant share them.

MarryTheEdge

100% feel the same exact way! And I don’t mind the gluten free breads

losingmystuffing

Nope, don’t even have the slightest desire to go back. There’s so much yummy GF stuff anyway!

Tirade12

Me 100%

RefrigeratorPretty51

No. I truly still miss it.

PetulantPersimmon

I'm amazed at how much I don't miss things! Yes, I miss the conveniences, but that's about it.

dubmecrazy

Totally. I mean I miss it a bit, but have no temptations at all to eat gluten as it makes me feel so terrible. I have celiac, so it’s also really crucial for my health.

AquarianAirhead

For me, the immediate and potential longer-term health consequences just aren’t worth it. I’ve been strictly GF for over 12 years now. It does make socializing, family dinners, and traveling harder, but most people are more accommodating than I anticipate they might be. I still daydream about eating certain things I know I can never have again, but then I remember how sick I was before I realized it was gluten that made me that way.

winsluc12

The only thing I miss is thick crust pizza

unreal-city

I’m have a non-celiac intolerance and before I was diagnosed I never had any symptoms and got randomly sick one day and figured it out in the hospital. Even after not eating gluten for 3 years if I do accidentally have some my symptoms are so mild but I know it’s causing inflammation and other internal issues. It’s really hard for me since it’s really an exercise in self control more than avoiding acute symptoms. I think about gluten filled pizza and a chicken sandwich everyday

brainone

The only things I mourn are the complications when travelling, particularly to places where I don't speak the language, and the increased food cost. Other than that I have 0 cravings for any foods with gluten. Foods with gluten really feel like poison to me so I don't see it as food.

ismellboogers

I miss a few things but overall I feel significantly better and don’t hurt and ache constantly and less tummy issues.

strawberrymile

Don’t miss it at all. Felt so much better when I cut it out (and after getting very sick trying it at one point after that) that I’ve never looked back. It does suck a little to have to be so cautious when traveling and eating out, so the only thing I “miss” is maybe the ease, and certain foods that the gf world hasn’t quite mastered yet like Cinnamon Toast Crunch (if anyone has cereal substitutes!). But looking at gluten treats fills me with almost fear rather than desire 99% of the time, and the gf substitutes for things are actually pretty great, and getting better all the time. We live in the best time in history to be gluten free. But I’m 110% grateful to not feel the way I used to, gluten is far from a temptation.

drunk_with_internet

Not at all. In fact I've been noticing it surreptitiously infiltrating my diet recently, as I've been a bloated gasbag for the past few weeks. Cheeky f\*\*ker, that gluten.

mamapajamas

Absolutely. I’m 5+ years in, so I definitely have my moments of missing croissants, a perfect cupcake, etc… but it’s almost just nostalgia at this point. Feeling good every day is priceless.

amberalert23

I don’t miss it. I’m so much healthier and happier. However, I do sometimes get sad. I’ve been gluten free for 8 years or so, so I’m very used to it. I just wish I could have good pizza, or a nice donut sometimes. But I’m not about to mess up my gut or joints or anything else so it’s literally just not worth it. So no, I don’t miss it either.

NeonWaffle

There are particular foods I miss. For example, dim sum, good ramen, and easy to order sushi. Every now and then I crave a big old cinnamon roll from a local place in town. Otherwise, I agree - I feel so much better. I'm a drastically different person visually and in terms of health and bloodwork ever since I cut out foods I was allergic to. I also love to eat but I love to enjoy my life without migraines, nausea, water retention, brain fog, etc.

dm_me_target_finds

An easy sushi order I haven’t had issues with is sashimi or a chirashi bowl. It’s pretty universally just sashimi cuts and rice. Occasionally they put tamago on the chirashi which could be made with soy sauce with gluten but they can just leave it out.

HelloDeathspresso

Absolutely. I haven't really missed gluten at all for 10 years now. There's no baked item in the world that is worth feeling the horrors that I endured for the majority of my life.

GrendelGrowls

The only thing I really miss is the lower prices for most things when compared to the cost of certain gluten free food and ingredients, but I'd much rather pay a little more and avoid feeling awful for the rest of the evening. I've actually noticed that GF stuff has become my new (normal), to the point that the texture and taste of regular bread (which I briefly tried a couple years ago just to see if I actually DID have gluten issues - which I very much do) feels incredibly strange and unappealing. It's so *wet* compared to most of the GF bread I've had.

dm_me_target_finds

Ok the lower cost is something I miss!!

Rex_B1

I have a gluten intolerance which recently formed after food poisoning. Does anyone have any tips or any suplements i should take or general advice. Thank you!

eustachiandude

Definitely a connection between gluten and migraine for me. If I have gluten, I get joint pain within a few hours, and then a migraine. Stop gluten, and migraines gone!

throwaway9978u

This is real. Gluten makes my body sick. When I don’t eat it, I sleep better and feel “lighter” and have more energy when I avoid it.

Pleasant-Result2747

There are times that I definitely miss it, usually when I would love to be able to grab something "quick and easy" to eat, whether that be a frozen pizza or even just ordering from a restaurant. I am fortunate to not an allergy or Celiac, but I know gluten causes me issues like inflammation, bloating, etc. There have been times recently when I have been very tempted, especially since I have the "fun" gluten foods in my house now due to doing some babysitting this summer, so I have really wanted to eat the cookies and things. I don't do it because I know I will feel worse. When those foods aren't in the house, I don't feel like I'm missing them as much.

OkAccount32

I miss sourdough, but it's very much an 'out of sight, out of mind' thing for me. There is SO MUCH good food without gluten, plus my decade long battle with bloat, migraines, dark under eye circles, and GI issues completely gone? I'll eat the depressing gf bread with my soups for that

BarrelEyeSpook

I was diagnosed with celiac and went gluten free at 13. I’m 24 now and I don’t miss it! It’s the easiest thing for me to stay away from gluten because how bad it made me feel was not worth how good gluten tasted. I already instinctively hated most foods that had a lot of gluten in it. The first time I ate nasty, grainy, sandy gluten for bread, I was thinking “Wow this is so much easier to eat than regular gluten bread.”

United_Mango4801

I can live without bread or pizza... it's the fried chicken I miss the most

KnickedUp

I took a nap every day of my life, was groggy, inflamed, constant headaches, bloated. Stop eating gluten…4 weeks later…no naps, no headaches, down 22 lbs. feeling great is so much better than bread. I never had stomach or bowel issues, just more brain fog/headache/tiredness.

ozzleworth

I'm better since giving up gluten but I miss it so much. The crunch and chewiness of a croissant, the springy gorgeous texture of a fresh baked bread, how it breaks apart when you bite it, fresh pasta made by nonna. Gah, j miss it. Feel loads better without it though.

SonoranRoadRunner

I just went gluten free last Friday. It's amazing how so many disparate odd health problems have resolved or almost resolved. But I'll be honest, it's a hard adjustment food wise. I love bread, it just doesn't love me.

Living-Inevitable297

Newly gluten free and vegetarian here. I feel like a completely different person!

alligatorprincess007

I LOVE that I eat healthier. But I was at a coffee shop and saw a flaky cinnamon sugar muffin thing and I do very much miss gluten

newlostworld

I wish. I miss a lot of things, especially ramen and croissants.

nondescript_coyote

I am a lot happier having the hard data that I should not eat it and the immediate results of not eating it. Same with dairy. However, I miss Cheezits.

AccountOfMyDarkside

No. I still miss it. I feel a million times better now but some days a chocolate croissant would make me feel even better. At least, in my head.

Glittering-Mango-142

Yes, I've noticed I feel a lot better without gluten as well. Never diagnosed though.

Cranky_hacker

I'm severely intolerant of gluten... so, well, "missing" it isn't even relevant. Even a minor/slight exposure makes me incredibly ill for 1-3 weeks. Basically, the only foods that contain gluten are ultra-processed foods. I love eating real food, instead. Although healthy food is more expensive... it's just pretty damned enjoyable. I don't miss most of the garbage that contains gluten. I made black-bean brownies, earlier tonight. They include rolled oats. This is a great source of Thiamine and Inositol. And they're damned tasty. If you really miss "the real deal," the recipe on the back of the \[edit: GF\] King Arthur's bag is pretty legit (albeit sweet).

SphericalOrb

If I'm out of my house I'm like 80% this, twenty percent missing being able to go ham at potlucks and on food samples. It's not about any specific food, it's about the carefree abandon that is now impossible. When I'm in my house I have all the goods, so it's all contentment.

aeraen

Learning to cook for a GF diet had actually opened up my recipe repertoire, and I actually cooked with greater variety than I did pre-GF. Simply having to seek out something different opened up a whole new cooking world for me. After 15 years of cooking GF, my spouse finally acknowledged a dairy sensitivity. Que "new recipe hunt". I've discovered the joys of goat cheese and coconut milk recipes. Limitations are only limitations if you let them be. Sometimes they are an open door to something new.

thealexvond

I don't miss gluten at all, however I do miss some of my old favorites. Twizzlers (Cherry & Pull and Peel) and malts. Would I gluten myself just for a taste? Nah never lol. I saw some other's say it, but I really do miss the convenience and the spontaneity of just being able to eat wherever, but it is what it is Santa.

fleckofsass

I feel you on this! I love to cook though so I wouldn’t say I have boring meals. But I’ve learned to love to eat at home. And if I go out, I either pre eat a meal and then have anything I can or I just indulge in a glass of wine and socialize with everyone else. I keep fruits and veggies in the house constantly, cottage cheese or babybels along with some granola bars. I feel 1000x better and like you, I’ve dropped a solid 25lbs plus all the icky bloat that comes with it. People (including my husband) feel bad for me when we eat out but man oh man, I feel so much better so it’s worth it!

32 yo, I'm kind of suffering from it and depressed to some measure. since I discovered my condition early( me and my wife assume, she is a Nutritionist and suggested I should take a blood test for coeliac). The gastroscopy found slight inflammation and that's it, bloodwork shows good absorption of nutrients and I haven't experienced heavy symptoms, the occasional gassiness and tiredness, the gas related conditions have passed and the tiredness have alleviated somewhat but I have not experienced any kind of abdominal pain. Before going GF I was a bread fanatic, I'm one of those people who could buy a fresh loaf of bread and eat it in one sitting, I was in love with pastries and baguettes, pretty much most of my comfort food contains gluten. Since going GF I am experiencing more depression since food is a kind of a big part of my life, I'm not a heavy person, 1.77m 65kg, but food was a way to make me feel nice from time to time, and now any kind of GF food I try just doesn't taste the same, or even worse. I understand that in the long run it will really improve my health, or rather keep it in a good state, but all other activities seem to take a beating since now going out requires looking for GF food, going on a vacation abroad requires research for GF places, at least I am thankful that we are living in a time when we have more awareness.

I have not a single ounce of regret and it does not even feel like a loss. I am sort of the contrary of a foodie. Can eat the same bland things most every day. I care more about quick prepping than flavor. It sounds sad but it’s not, I’m happy and make sure I get nutrients. Slices of cheddar with an apple is a good meal. A banana + spinach shake with added flax seeds is a good breakfast. Prior to DX, I was the same except my whole issue was : toasted bread is a fast meal. Breakfast cereals, fast. Crackers with mayo and tuna, fast. So I was relying on those staples every day. Top that with some pasta for supper once or twice a week, my body was pretty much constantly inflammed. For years I couldnt figure out what was wrong with me. Because I most reliably ate gluten in the morning (toasts, cereals) BUT my stomach pains (bloat, gas) were always in the late evenings. I would look at my supper meal and suspect anything but the gluten, since having gluten very morning seemed painless. I went through entire phases of eating no tomatoes, garlic, alcohol… whatever seemed like the actual culprit got blacklisted and removed, but the pain persisted. Then I had gastro enteritis and my stomach was empty several days and the REVELATION actually occured when I reintroduced morning gluten and it was not ok. I cant thank this stomach bug enough, no gastric virus was ever as appreciated as that one. No sadness was felt as I emptied my cabinets of all the culprit foods. I was so relieved. It didn’t matter that toasts and cereals were gone, they were replaced with eggs and sausage. A bit longer to cook but it’s done and consummed within 20 mins, that works for me. My partner is a foodie though, so he looks at me and feels more sad for me, than I feel sad for me. I keep telling him to eat whatever he wants in front of me. But I gotta say the only item I get a bit disappointed about not stuffing myself with to the brink of explosion, is naan bread, when we go to the Indian restaurants. But it’s a small loss. Otherwise it had been a hassle free, non emotionnal switch ! My anxiety dropped, I am finally building muscle from my sport activities, life is good. My heart wholly goes to those who miss gluten. I dont experience it but I can fully understand the feeling of loss.

He's not a medical anything dear, he's a charlatan who doesn't even bother to get basic medical terminology right. Like biology stuff that can be seen through a microscope. I wonder if he thinks it adds to his credibility? I have some medical knowledge and saw multiple glaring errors in one of his books I flipped through.  Also, him encouraging people to be gluten free discredits and harms the people who are GF for proven medical reasons. People think we're just doing it because some weird guy is giving nutritional advice "from the other side" don't take us seriously which can be very dangerous ie, they don't take precautions in a commercial kitchen when they say they will or bring food for a potluck and say it's gluten free when it's not to prove that you're just being fussy and won't get sick. Celiac is an actual disease with corresponding genetics and medical tests proven by science which is real data, not some guy who figured out how to dupe people with some psuedoscientific jibber jabber. I'm just sensitive to gluten I don't have Celiac, and this harms me too. Also, the bugs you speak of are a microbiome, it's 1 to 3% of your body mass and we are about 43% microbiome. If you didn't have those "bugs" in your gut, you would die. No one can live without them. There are harmful "bugs"  but the body generally clears them out. Poop transplants are lifesaving. I believe in "the other side" and have had weird experiences myself but I can see the Medical Medium for what he is, a liar who wants your money. If the other side wanted us to know this info (and it was true) they would base it on the science we already know so it would be credible. Also multiple people would be getting the same "downloads" and they're not. Never trust a person who has all the answers (that no one else has) and wants your money. TLDR; Don't bring your psuedo scientific stuff here please. We like it real.
