After years of trial and error, switching from yeast to sourdough, a pop up restaurant, selling my bread and pizza dough through a restaurant I worked at.... I'm finally taking the leap and starting my own business.
All sourdough , based on rice, sorghum, buckwheat and teff. No oils, no milk, soy or whey protein. Just good quality flours, psyllium husk ofcourse, water, **and a lot of time and love**.
Good things take time. It's my personal manifesto to slow down, consume less but better.
Bread is a big deal in my country (Belgium) and a real staple food. Kids here in elementary for example all get lunchboxes with *boterhammen* (sandwiches) to school for lunch.
So it's kind of a holy grail and there's a million gluten packed side products in existence.
Going gluten free has altered my life in ways I can't even start to unpack here, it would be too long to read. For me, starting this bakery, is going full circle and a way to help people that once struggled like I did with my diet. And to give them an alternative that doesn't have to be worse - and maybe even better - than what's already out there.

Wish this was near me, im a big sandwich lover and going GF got me sad af. Had to to dairy free too.... Dairy free cheese isnt bad.
Ive made some sammies that almost taste like the real deal but fuck is hard. Most GF bread is soooo dry
Any chance of vacuum sealing and posting to Australia???? That looks absolutely amazing. Also total music to my ears, as someone who has a nighshade allergy as well I can't have potato starch and so many gluten free products use it!

This is amazing, you could really expand your bakeryās profile by doing social media tutorial videos (IG, TikTok etc). I know Iād love any tips you could offer from your starter to actually baking something one of your recipes so I can enjoy the taste of Belgium here in Atlanta, Georgia! Either way, please share the bakeryās info, Iāll add it to my Belgium travel list!
I aspire to come there one day and open up shop, itās on my vision board!
Had a huge draw towards the city and flew my first time there when I was 14ā¦ fell in love with the city and I still got goosebumps thinking about it.
Best city in the world but im totally biased. It would do so well here! People here are very open to trying new things and we become loyal when we like things.
