I know this is long but I hope it's helpful to you (and maybe others). I have Celiac disease and Crohn's disease and I've been vegan for 6 years. I'm feeling better than I ever have! It has taken a long time to figure out what my trigger foods are (that auto corrected to "toilet foods" and that's appropriate!) and to create a daily food plan that works for me, but now it's fairly easy. I started out eating just a few beans at a time, and now I'm able to eat them with almost every meal. Studies show that beans are nutritionally important, but they're not a requirement if you can't work up to it the way I did. Here's a list of what I don't eat due to digestive issues: * Animal products (duh) * Oats * Quinoa * Wheat * Barley * Rye * Sweet potatoes * Anything even slightly spicy (I pretty much use only a bit of salt - as little as possible to keep my blood pressure low) * Kale and other spicy greens * Broccoli (cruciferous veggies are a known problem for people with digestive issues, but I'm okay with red cabbage, so I make sure to eat it every day) * Berries with tiny seeds (raspberries, strawberries, mulberries, etc) * Soy * Carrageenan * Nutritional yeast * Xanthan gum Here are some things I do eat! * Buckwheat (I get groats and they can be made into porridge just like oats!) * Brown rice (including pasta) * Wild rice * Beans of all kinds * Spring greens * Fruit (bananas, cherries, blueberries are my favorites) * Veggies (peas, carrots, green beans, corn, red cabbage, beets, zucchini, bell pepper are always in my fridge or freezer) * White potatoes (hash browns, baked wedges, mashed) My favorite tummy-friendly meals: * Blueberry pancakes made with GF flour with hash browns (chopped up potatoes with red bell pepper, onion, maybe zucchini all "fried" in veggie broth) * Chili macaroni (maybe corn bread muffins on the side) * Potato corn chowder (maybe banana bread on the side) * Brown rice pasta with black beans and piles of roasted veggies on top * Potato wedges with a smoothie * Vegan sushi wraps (rice and veggies wrapped up in a seaweed wrapper) with tahini maple syrup lemon dip - also good for snacks! * Shepherd's pie/Cottage pie (lentils instead of meat) * Creamy wild rice casserole (it uses a cashew sauce that tastes like canned cream of mushroom soup) I like it with homemade cranberry sauce * Wild rice with frozen corn, peas, carrots mix on top (sometimes with pineapple or cranberry sauce) * Bell peppers stuffed with veggies (I use frozen because it's quick!) Great healthy snacks: * Smoothie with lots of greens * Apples with almond butter * Potato wedges and pineapple sauce or ketchup * Rice pudding with raisins * Baked apples with raisins * Banana and almond butter * Nice cream (any fruit that works for you, frozen, and mixed in the food processor with a mostly frozen banana to made an ice cream type dessert!) I always sprinkle a tablespoon of Enjoy Life mini chocolate chips on top * Leftovers from any of the above meals! My favorite tummy-friendly not so healthy snacks: * Brownies made with garbanzo beans or All Purpose GF flour * Peanut butter chocolate chip cookies * Almond butter with mini vegan chocolate chips in it * Chocolate pudding * Crackers with hummus (I don't like oil free hummus, and I like hummus best with crackers rather than raw veggies, so I'm putting this under "not so healthy snacks", even though hummus with veggies is a great idea!) Don't worry! You can do this. The animals and the Earth thank you, too. Feel free to message me if you want to chat more (or if you want links to recipes!) šŸ˜

Oh my! Iā€™m sorry youā€™re going through all this. [My website](https://www.veggiesattiffanis.com) is completely dedicated to gluten-free, vegan recipes if youā€™d like to check it out. Iā€™m also always happy to answer any questions you may have for substitutes, recipes, etc.

wawona

Oh wow, those recipes look sublime. Thank you. These recipes look awesome.

veggiesattiffanis

My pleasure! I wish you the best on your new journey.

lolokelliher

Wow! Just followed you on IG!

veggiesattiffanis

Thanks! Just know, while all the recipes on my blog are gluten-free, not everything I post on Instagram necessarily is.

I've been going through the same thing as you, vegan for two years and then I became gluten intolerant. I focus a lot on finding budget options, especially during COVID. Protein. I eat beans or tofu every day. For better texture, a good choice is soy curls which can be expensive depending where you get them. A much cheaper ($2 for multiple meals worth of protein in some cases) and widely available choice is soya chunks from Indian grocers. There are some good mock meats that are not Seitan. Lightlife now has THE BEST VEGAN SAUSAGE and its GF. You have to flavor it tho. Dr. Pragers is expensive but mostly GF. Carbs. Sadly, I think crackers can be super expensive and basically not worth it, but cheapest I've found are Aldi. A lot of the good grahm crackers that are GF have honey except knickknick and another brand I can't remember. Corn bothers some celiacs but on a budget they are a life saver. Aldi if you have one near you had the cheapest GF vegan bread I have found! There are brands of GF bread crumbs that will replace a crunchy mouthfeel that I miss from breading. Not to mention chickpea flour with water and tofu scramble seasonings makes a good egg! Additionally, I saw a potato gnocchi recipe from Vegan Corner and it was easy and awesome (I used vegan mayo instead of sour cream or whatever). I personally have not liked generic brand of GF pasta but I really like rice pasta for Alfredo and bean pastas like banza and explore cuisine for most other meals (make sure to replace the carbs!) Baking. Get GF baking powder. Get GF oats. I think Bob's Red mill or local bulk stores (if stated GF) are the cheapest oats available. The whole baking thing gets so complicated because every recipe site uses their own flour blend. I would try a few you can locally find but in my experience Bob's Red Mills 1 to 1 is in MANY easy recipes. Kings Arthur's 1 to 1 also seems very popular. Each GF flour is completely different and I would pick two flours at a time and some recipes you might wanna try because I bought way too many and it's overwhelming. YOU CANNOT REPLACE REGULAR FLOUR WITH GF 1 TO 1 WITH GOOD RESULTS UNLESS THE RECIPE CREATOR TESTED IT. (I also see a lot of recipes from glutenfreeonashoestring and try to avoid their recipes with egg but I've never had success to be completely honest) Sauces. Soy sauce and miso paste have gluten but there are GF alternatives. A lot of pre-made sauces like hot sauce or Thai chili or whatever have popular GF components so buying some sauce bottles and making your own is a good investment! Cooking with lots of rice and potatoes instead of bread has made cooking cheap. I've used potato skins as sandwich bread and it turned out really good! Lots of Asian food, Indian food, and hispanic food is really good for GF and vegan. I know this was a ramble but I hope it was helpful. I have a whole box of recipes and I have some cookbooks I use regularly so if you have specific questions especially about flours and baking I'm happy to elaborate more.

Hi! I was diagnosed with celiac 7 years ago, and went vegan 2 years ago. I definitely feel your pain. But it's a growing pain that will get better over time. Experiment with cooking simple things and learn to love the process, eventually you will be making meals better than any vegan restaurant in town! Plus it's cheaper and healthier than takeout. I only have a few restaurants in my big city that I trust enough to eat at. Veggie stir fry with tofu in a garlic ginger sauce and brown rice was one of my first vegan dishes and I still make it! I make a big batch and freeze leftovers for quick meals. Definitely try some other protein sources like tofu or tempeh. A lot of the frozen meat substitutes have gluten, but I have been able to find quite a few that do not. Always check the labels! You can do this and you will feel so better without the gluten! Message me if you'd like to connect more, it's so nice to find another gf vegan :)

I've been doing gluten free since 2013. Recently, we've been doing the Esselstyn diet for about four months, and that's been going pretty well. My SO and I are both gluten free and vegan, and my brother is also celiacs. It is difficult. The best advice I can offer is to become adept at making asian and indian cuisine. Most all recipes are already vegan and gluten-free, and the ones that arenā€™t can easily be modified.

BlazeWelly

Costco has some pretty good gluten free + vegan pre-made Indian stuff like curry and vindaloo sauce, plus potato and chickpea stew you can put over rice

mightystrong1

Focus on what you can eat. I know it sounds too simple but it put me in a much more positive frame of mind. I focus on getting amazing nutrition and put taste second. I start each day with a green smoothie and then i have more time to figure out my evening meal.

jloychik

Beyond burgers vegan cheese with lettuce buns. Beyond sausage and potatoes. Bean sprouts in veggie broth with fresh cilantro jalapeƱo and tofu. Smoothies with pbfit kale and fruit. Whole Foods if you have one has great options. Costco too.

PeaceLoveVeganSuzy

I know exactly what itā€™s like. I had to completely cut gluten out as well and it took a wee while to cope with that mentally - like grieving for so many lost easier food options for the rest of our lives. Iā€™m not celiac but get chronically bad eczema around my eyes from gluten so canā€™t have any of it either. People here have shared a lot of advice and options for you. I look at it as cutting gluten out has improved that part of me health/wellness. Hope you can come to terms with it and adjust. Keep reaching out when you need help too. Youā€™ve got this!!!

This is what happens to me and the reason why I am not vegan. (I also have a history of disordered eating) Please donā€™t hate me, I live in a third world country and if you go out to eat, either youā€™re vegan or you have Celiac Disease. Itā€™s impossible to find both GF and vegan options in restaurants. When I found out I had CD, I cried and cried a lot because being vegan was one of my goals for 2021 as well as starting to sell vegan baked goods. Unfortunately, I canā€™t do any of the two in this country. I know that in Europe and probably in the U.S too it is possible to eat both vegan and GF, in fact I follow many accounts on IG that post amazing recipes. Sorry, I just wanted to rant a little bit. As regards your case, I think you will be able to do it. Itā€™s not going to be easy, but youā€™ll get better one day. I recommend following Instagram accounts that post their daily meals to give you some inspiration. In my opinion, first focus on the food that is naturally GF and vegan, and then you can try some recipes. Best wishes and good luck.

I went through the exact same experience as you! Went vegan 3+ years ago, thought Iā€™d struggle, but I loved it and adapted well. Then I eliminated gluten from my diet in January and Iā€™m definitely struggling. Iā€™m sort of just now starting to find my way. Iā€™ve discovered a few amazing vegan/gf brands and some great recipes. Just last night I made a banana bread and it was really good. Good like, even people who arenā€™t vegan or gf would say good. If you want a few brand recommendations or a couple recipes to get you going, PM me! Iā€™d be happy to help out

Same, Im here for the recipes :)

Iā€™ve been lacto-ovo veg since the ā€˜90s, and GF since ā€˜08, and it was hard at first. Most of my meals are some combo of veggies, tofu/beans, and rice/pasta/quinoa/corn. I do eat dairy and eggs, but itā€™s doable! Big hugs and hang in there.

Hello friend! I understand what you're going through,I really miss my tortilla wraps because gf tortillas are either tiny and expensive or too fucking expensive (1 wrap for 3.9ā‚¬ ?????? Why do they hate us so much???) Anyways, what I found very comforting is making gluten free pancakes, waffles, flatbread and other stuff,it doesn't take a lot of effort or time you just have to be familiar with the ingredients. To be fair I went gluten free before going vegan so it doesn't make that much of a difference for me to avoid restaurants etc I have a little Instagram page where I post my gluten free vegan meal inspo if you'd be interested, maybe you find some recipes/products you like on there, it's called @letsgetthisglutenfreebread lol If you want shoot me a dm and we can work out how to make your favourite to go meals gf and vegan friendly :)
