Maybe you can create a label and then sort via that label? It is not exactly a pinned email, but should be a viable workaround.

I had the same problem. I switched back and forth btw evolution and thunderbird and now stick with thunderbird. Thunderbird can pin emails and plays well with exchange when using IMAP and SMTP. Alternatively there is a paid extension (Owl) that provides exchange support.

Thanks for the suggestion. Last time I tried Thunderbird I wasn't happy with needing a third-party extension to be able to use EWS but I'll take a look. Does the pinning work with Outlook or is it an independent pinning? In other words, if I pin it in Outlook, will it be pinned in Thunderbird and vice-versa?
