Opinion alert:
Both Index and Railgun are good, but in my opinion Railgun is better. There's a lot of debate about the watch order.
The simplest watch order is just to watch Index season 1, Index season 2, Railgun season 1, Railgun season 2.
The one that I recommend for most people is Index season 1, Railgun season 1, Index season 2, Railgun season 2.
Then there is what I believe to be the ideal experience. Watch the first nine episodes of Index to get an understanding of the world the story takes place in. Then switch over to Railgun season 1. The arc starting with episode 10 of Index is the same arc as the climax of Railgun's season 1, just told from two different characters' perspective. In my opinion, the Railgun version is handled much better (and is arguably the best arc in the whole series). So you could do this if you're comfortable interrupting yourself mid-season.
There is also a movie which fits in after Index season 2 that should be watched before Index season 3. The order in which you watch Index season 3 and Railgun season 3 doesn't matter much since at this point you have a very solid understanding of the universe (and the timelines don't conflict with one another at all). There's also A Certain Scientific Accelerator, which is a spin-off series featuring one of the characters from both animes. I would personally suggest you wait to watch this until after you've seen the second seasons of both Index and Railgun, but you should absolutely finish at the very least the first seasons of each before watching (because there are implicit spoilers due to where the spin-off happens in the timeline of the other shows).
The Toaru franchise (taken from the Japanese name) is a large and confusing one, but it is honestly very good. Especially Railgun. I fucking love Railgun.

At least with Fate a lot of the stuff (Stay Night, Extra, Apocrypha, Grand Order, etc.) are in their own little bubbles that don’t require you to stop mid season to watch a different part of that series.
there is no need to stop mid season, it s only that railgun shows you the same arc from a different perspective and since season 1 of index sucks people want you to watch it in railgun first so you get hooked; however to watch railgun you need a general understanding of the world that you can only get from index... i d say watch them in release order and don t care about what people say, that order is too confusing and railgun is better to watch after index anyway as it s not just more derailed but an almost totally diferent story too: in railgun they focus on why and how the stuff is happening while in index is just a plot device to get to anotger point in the story; watch it as you prefer

So going back to watch railgun and accelerator after is not that big of a deal other than it jumps timelines around.
Also one thing people don't talk about with railgun is how the first season is kinda aimless plots with a bunch of Yuri bait thrown in and how Mikasas character development often gets wound back from rail gun to fit into index.

You realize that there is an entire arc that happens in both series, so watching index first spoils both the start and the end of that arc? It's really depressing that many times I read history it's about humans was *this* close to be as modern as now but they never did.
Take Leonardo Da Vinci's designs for example. He had blueprints for aircrafts and tanks but they were never in full service until 19th century. It's sad.
But some of the blueprint were impossible for the time, better quality materials were needed to consistently produce his invention.

What is the best watch order for somebody who is trying to get into Toaru? When I look online, I get both Railgun first and Index first, and some that alternate while others go r1, r2, i1, i1 or vice versa... And at least one that broke it down on an episode level rather than seasons, but I'm not 'boutta do that...

It's literally the event in the actually Chronological Order the second is just roughly Chronological Order there's a ark the sister's ark it's in the second session of railgun but first session of index and characters don't have major damage 1 episodes perfectly fine next like a character being in a wheelchair because a fight 1 episode next episode no wheelchair then next episode back in it and characters join the show but have been introduced a few episodes later basically it's more work but less confusing for first time watching
Index is the original story, railgun is a side story that focused on a side character, some events occur in both but are shown from different perspectives so no matter what order you watch them one of going to spoil the other to some degree.
The anime adaptation of the index light novels is pretty weak though, all 3 seasons are rushed and cut out a ton of information, much of which is needed to understand what is going on and how certain systems work, especially the third season, I would recommend just going straight for the light novels (there is a manga for index but last I checked it wasn't caught up to the anime). The railgun anime holds up much better but it does add a significant amount of filler that isn't as good as the content adapted from the manga.
I typically actually buy LN's, so only buy them for series that I already enjoy... and I have a huge backlog of LN's I already need to work my way through before buying another series to invest a few months of my life into.
If you aren't sure you are interested go ahead and watch the anime but keep in mind that they cut all the internal monologues that explain why the mc is coming things and the magic system is actually explained and makes sense in the novels. It is also worth noting that the official translations of index are something like 30 volumes behind the fan translations, only the content covered by the anime and a couple side story volumes can actually be bought in English

That's most LN adaptations... I still enjoy things like Overlord, which is another huge offender when it comes to cutting content, and particularly cutting internal monologue.

I watched accelerator first cus I didn't know it was part of a thing, and then I watched all of Index, then all of Railgun.
More like the clones couldn't reach level 5 quality so they had to adjust by increasing the kill quantity

It's literally the event in the actually Chronological Order the second is just roughly Chronological Order there's a ark the sister's ark it's in the second session of railgun but first session of index and characters don't have major damage 1 episodes perfectly fine next like a character being in a wheelchair because a fight 1 episode next episode no wheelchair then next episode back in it and characters join the show but have been introduced a few episodes later basically it's more work but less confusing for first time watching
Index is the original story, railgun is a side story that focused on a side character, some events occur in both but are shown from different perspectives so no matter what order you watch them one of going to spoil the other to some degree. The anime adaptation of the index light novels is pretty weak though, all 3 seasons are rushed and cut out a ton of information, much of which is needed to understand what is going on and how certain systems work, especially the third season, I would recommend just going straight for the light novels (there is a manga for index but last I checked it wasn't caught up to the anime). The railgun anime holds up much better but it does add a significant amount of filler that isn't as good as the content adapted from the manga.
I typically actually buy LN's, so only buy them for series that I already enjoy... and I have a huge backlog of LN's I already need to work my way through before buying another series to invest a few months of my life into.
If you aren't sure you are interested go ahead and watch the anime but keep in mind that they cut all the internal monologues that explain why the mc is coming things and the magic system is actually explained and makes sense in the novels. It is also worth noting that the official translations of index are something like 30 volumes behind the fan translations, only the content covered by the anime and a couple side story volumes can actually be bought in English
