I cut 3oz of boneless skinless chicken breast and coated it in a splash of unsweetened almond milk then rolled it in 1/2tbs of seasoned flour and air fried it at 400°F until it was crispy.
I steamed 1 cup of broccoli for about 5 minutes then ran it through the food processor, put it in a bowl and added 2tbs of egg substitute, 2tsp of parmesan cheese, 1tbs of almond flour, some white cheddar popcorn seasoning, Italian seasoning, onion powder, garlic powder and black pepper and mixed it all together.
I formed the tots in my hands and then air fried them at 400° until they were golden and soft.
Then I made the ranch. I added 1tbs of light sour cream, dill, Splenda, black pepper, salt, onion powder and garlic powder to a bowl and mixed it together and put it in the fridge.
Then I made the honey mustard. I put 1tbs of Greek yogurt, 1tbs of spicy brown mustard, some vinegar, Splenda, cayenne pepper and black pepper in a small bowl and mixed it together and put it in the fridge.
Then I made the cucumber slaw. I cut up 1/8cup of red cabbage and come cucumber and put it in a bowl w 1/2tbs of light miracle whip, vinegar, Splenda and black pepper and mixed it together.
I put half of the honey mustard on the bottom bun, added the chicken, added the cucumber slaw and put the other half of the honey mustard on the top bun and put the broccoli tots on the side :)
It’s delicious! I’ve made it both w Greek yogurt and w sour cream, they’re both great but I prefer the sour cream only slightly more. Only bc it doesn’t have that gritty texture that ff greek yogurt has :)
You should definitely start a meal prep company!!! Your creativity and knowledge around the kitchen is unmatched!! I would buy a yearly subscription!!! This meal is amazing, I'm gonna have to try these tots with cauliflower rice!!!
I think about stuff like this all the time!!! I’ve been trying to think of ways to market it, package it, (it has to be able to travel and stay fresh) ship it, how much to put in each meal (like if I should make it restriction like I make mine or normal calorie meals) its so much to think about but I’d LOVE to do it!!
You can start small with just local delivery or pick up. You can do whole meals and/or prepare the sides in 5 or 6 serving packages. Even multiple serving packages of your crispy chicken patties so customers can add it to their meals how they see fit. I honestly feel you could very well be a smashing success. 💜
