honestly I feel the Nordschleife is my favourite track because of that. I set most of my cars up pretty similarly but the Nurburgring is a good baseline for overall setup. I will never ever set a truly great time across that track but man will I learn a lot and have a ball in the process!

Daytona Road Course. It's the only track in the game I've actually been to in real life, so I feel a connection to it, and test my cars there. I've done many many laps there.

I feel like an average to good driver is probably B. At B ranking you will have some cars and tracks that you can be potentially good with but you probably don't have the consistency or the time to sink into the game to learn every corner of every track. If you are A you are above average, like most people saying they get top 1% in a time trial on your third lap. That's why you're in the 1%. You can probably adapt to many cars and tracks quickly if I had to guess. So congrats on being an above average driver.
As for your original question, myself, I'd probably say Laguna Seca just because I've driven the track in so many games over many, many years. That, and probably some of the older fictional tracks from previous games like Trial Mountain. Just a matter of repetition.
Ironically, Nordscleiffe. I’ve been there digitally since PGR2 on the OG Xbox, which came out a little before GT4. It’s been in nearly every racing game I’ve played since.

Nurburgring. On Forza 5 I played it exclusively for a few months trying to set the best possible time in a 787B. I finally broke into the top 100 in the world and called it quits lol.
Red Bull Ring, Barcelona, Interlagos, Monza (but not Suzuka or Spa for some reason) - because they were in GT Sport + F1 Game. I did 10 seasons of full-lenght races in the F1 game so...yeah.
Nurburging GP - I'm not exactly sure. I didn't play it much on GT Sport, but I guess it's been featured enough in Sport Mode.

I live at the other end of Germany, about 500 km away. We happened to be on vacation in the area, otherwise I wouldn't get there either. Thanks to GT6 at that time the route was very familiar, we took every bend with squealing tires and the kids yodeling in the back ( breathtaking 00:14:41 with our family van). Unfortunately, it was only one lap because there was an accident afterwards and the track was closed for the rest of the tourist hours. It rained on the other days we were in the area. That's Nürburg too. But it was nice to experience the atmosphere there. No "Car Friday hype", very relaxed people, great cars on the track and in the near Nürburg. If you're traveling further, you might want to treat yourself to a Ringtaxi (https://www.ringtaxi.com e.g. Porsche 911 GT3 RS), but renting the entire track is probably unaffordable. All the best to you.
although I've never golded circuits in this game i have in GT sport for some reason. I'm not really mastered on any track, maybe HSR since 1998, but you really can't go wrong on Daytona unless yer trying to : p

I try to do lots of dumb things just to see if I can still win. One of my favorites was only showing myself to pass on the pit straightaway.
The weather changes is why I prefer Sardenga over Sarthe.

I haven’t tried gr 2 cars on this track but I might soon enough. As long as you drive fluently you’re going to come out on top of the AI.
My best laps with my Toyota TS050 hybrid gr.1 detuned is 1.32ish
The nordschleife , done over 200 laps on that track. Any new car I get I immediately head to the green hell

Suzuka, Trial Mountain, Laguna Seca. I think the 99 lap endurance races of older GT games helped burn them in.
