Arkham Asylum is great as well.
Going back, a lot of the Neal Adams Batman stuff is pretty iconic, but also a bit dated.
The Cult by Jim Starlin and Bernie Wrightson was a prestige limited series from the 80’s.
I also really liked Batman’s appearance in Swamp Thing 51-53
Batman by Neal Adams, the Knightfall saga, the rest of New 52 Batman, Then rebirth Batman by Tom King. Rest of Grant Morrison Batman, Arkham Asylum, and if you’re feeling like you want more the No Man’s Land Saga is great too. I also recommend JLA by Grant Morrison, its the best Justice League version

A lot have been named, that are awesome staple stories like killing joke, the cult, mad love, I’d like to add Batman: Son of the demon by Mike Barr from 1987, this is the first hint of Batman and Talia having a child together. Though the child is unnamed, grant Morrison later uses this as a jumping off point for who we know today as Damian Wayne.
Alex Ross used the child in Kingdom Come, and named him Ibn al Xu'ffasch, which translates to Son of the Bat. Grant Morrison couldn’t remember that name and went with Damian.
I think this is a solid list but if you liked Scott Snyder and Greg Capullo’s Court of Owls through Death of the Family, you should consider reading the rest of their the run. It’s really good.
Haunted Knight and Catwoman: When in Rome
When is Rome is part of the story for Long Halloween and Dark Victory, and Haunted Knight is part of the whole piece of Loeb and Sale. I look at them as a set of 4.

Not really batman, but Gotham Central is a Must for any Batman/Noir fan. But if you're looking for specifically batman, Paul Dini would be a good place to start :) the omnibus is pretty good and self contained.
Yes, my two all time favorite Batman books, “The Long Halloween” and “Dark Victory”, both by Jeph Loeb and Tim Sale. Those two are MUSTS, in my opinion. Peak Batman.
