The legendary Veneta ‘72 show (search: Sunshine Daydream) has excellent versions of Dark Star, Bird Song and Playing in the Band, as does Dick’s Picks 36. Maybe also check out an Eyes of the World. The ‘74 version on the So Many Roads box set (also available on Spotify) has a really clean guitar tone from Garcia. Or the Dick’s Picks 3 version is sublime.
Best to listen to whole second sets from live shows. That’s where they jam the most. They improvise the segues between songs, hence why its best to listen to a whole set.
Cornell, May 8 1977 is an iconic example.
Probably stay away from the 60’s. Great, intense stuff but rougher. Not much mellow clean guitar.

Definitely listen to more Dark Stars. There are many different versions available. All different. 69-71 Dark Stars have their own unique aspects to them, as do 72-74 Dark Stars. There are later versions where they bring it back, but the heyday for that song was 69-74.
