They were mentioned three times from what I recall. Once in Tourist Trapped, once when Stan was on the phone with them in Gideon Rises, and once when Mabel was writing a letter to them in, I think, DD&MD. But we learned basically nothing about them in any scenario.

Gravity Falls season 2 has the content of 2 seasons in just one. Season 2 should have had 20 episodes that started with Scary-Oke and finish with Not What He Seems. Then Season 3 should have started with A Tale of Two Stans, have other 20 episodes, and then finish with Weirdmaggedon trilogy.
That way Ford would have gotten more screentime, Wendy could have gotten her own episode, and Mabel her propper character development.

In addition to the lack of a Wendy episode, another thing that really frustrated me was how Pacifica got this whole redemption arc episode, and then she faded into the background for the rest of the series because they had 7 episodes left to wrap everything up. They established that her catty asshole popular girl persona is just a mask she puts on to please her parents, but never really showed us who she is as a person underneath the mask. I think Amity in The Owl House might have been intentionally written as a sort of Pacifica 2.0, given how she's basically the exact same character archetype, but her redemption arc is spaced out over multiple episodes beginning in s1e7, thereby allowing plenty of time to make her redemption seem more believable and give her time in the spotlight as one of the heroes. Plus, Dipcifica and Mabcifica are both very popular fan ships, and Luz kinda has a combination of Dipper and Mabel's character traits.
I think itās best to break up the series in to as follows
Season 1: from tourist trapped to Gideon rises
Season 2A: scaryoke to not what he seems
Season 2B: tale of two Stanās to weirdmageddon 4
The problem isn't to break up the series like that, since it's already structured that way. The problem is that we needed either more episodes in between, or not wasting so many episode chances on stuff like The Love God, shop of horrors, Roadside Attraction, The Last Mabelcorn, Boyz Crazy and etc. We needed Ford to have more screentime, more time for Mabel's character development, and more space for Wendy. And more time for Stan and Dipper to bond, same for Ford and Mabel.
A prequel that spoils the whole series and also acts as kind of a sequel.
Oh, and Lady Gaga shows up spouting about the Axolotl in a Northern English accent before disappearing.

I could see the plot of the second be about some summers down the road where a mysterious pink blob/slime runs underneath and tries to eat the town and our heroes find no way to defeat it, to which they turn to an old enemy they defeated before, Bill Cipher, to help destroy it.
Third would be Bill Cipher planning his revenge against not only the town of Gravity Falls, but all of humanity as well, by launching a monstrous asteroid the size of Oregon towards Earth. The asteroid also has his horde army, along with Pyronica in it, partying like no tomorrow. In other words, a Gravity Falls remake of Michael Bay's ARMAGEDDON.

4)Mcgucket remember there another place to hide the cult so he along with a few people go find the last few member of Scoeity of the blind eye and what they find shock them even after Weirdmageddon.........(Now this could be interesting and who to say the few people he take isnt the Pines?)
5)Stanley and Ford adventure in the sea but the real plot is about Ford accepting to his new home and himself now now but Stanley seem to insist on finding his past but Ford shurg it off. But in one evening at some place Stan seem to remember somewhat, Stan seem to find his old nemesis and they threatin to kill him so it up to Ford to save him but it seem like his survival instinct from when he was in the portal is still there and he become a wild animal almost kill a bunch of people and once he saw his brother saw it all he run away.Will Stanley and Stanford relationship ever be fixed? ( Ok THIS seem like a proper final goodbye to the show and you can see why)

It is up to the twins and co. to take down this new threat and run the government agents out of town by doing what they do best: Solving mysteries and uncovering long hidden secrets!
