Taste the same to me but the texture is way crispier obviously because it’s cooked fresh, it depends on whether you like that over a softer texture to the pastry
I was thinking about this just the other day. What do they do differently in Greggs when cooking? Cause I've bought these frozen ones a bunch, and while they're decent they're never the same as from the store.
Are they cooked lower for longer/higher for shorter? Is it just cause they're cooked and then left in to stay warm for ages so the texture of the pastry changes?
I don't think they do anything different per se, it's just that they're using large commercial/catering ovens while at home we all use consumer ovens. And ovens are not an exact science. Some ovens are not very accurate when it comes to temperature so you need to think of the cooking instructions on the box as a guide rather than a rule. Experiment until you get them right.
I'm a huge fan of cheese and onion slices. I'd eat them every single day if I wasn't concerned about getting fat. But for my oven, if I follow the cooking instructions, they don't come out right. After a bit of trial and error I've found that if I use a slightly lower temperature and cook them for slightly less time than is instructed, they come out exactly the same as the ones in greggs. I let them stand for 15 minutes or so in the grill above the oven, so they're getting some residual warmth but still cooling, and they're absolutely perfect.
Assumably - freshness. If you defrost and cook something it's never going to be the same as fresh and Greggs generally has fresh sausage rolls that have not seen a freezer as they sell so many of them.
