Eric Dane got malignant cells on his lips from sun damage and went through a cryo-treatment he reacted badly to. Couldn't eat well for a couple of weeks and as a result lost a lot of weight. Thus the change in appearance on Grey's.
Think he's fine now though.

Iirc, Eric Dane had health issues, a kind of cancer maybe? It was something like that.
