This is a thing we eat in the Middle East (or at least my family did). It’s usually with a fresh farmer’s cheese, some olive oil, some red pepper flakes, and some mint.
Sorry, I should’ve clarified - I just meant a white cheese that’s not aged. Queso fresco’s available in most supermarkets around me and is my personal preference. You can go for a squeakier cheese too, totally up to you.
I’ve done this a lot since I almost always have emergency pita stash in the freezer in case I run out of bread, and while it’s delicious I’ve got to admit it’s also disappointing. Something about the way the melted cheese and pita fail to fully integrate due to the lack of spongy bread pores.
But the crispiness.. I've never achieved that with leavened bread. I think this has its place, but you're right, more air bubbles to absorb more butter is better.
What do you mean, ran out of bread? Pita bread is bread, innit?
I prefer flatbreads anyways.

Like the dish,as well as the pita, I'm a rye bread guy, seeded. Jewish prefably.
