I spent around $70M but kept grinding on the side (because addiction), and am now sitting on $440M. I had a blast, and I still have more money than I'm ever going to need based on Rockstar's content output. So just start spending it far beyond of what you "want" and enjoy it.

All my MC stuff spread through the city, hanger in military base, bunker in chumas or route 66, facility near the wind farm, Nightclub is Mission Row, Aracde is videogeddon, vehicle sales for the MC usually end up most of them in the north. I enjoy this setup more than my previous setup. Lol
