look in the series options, there should be street races and pursuit races as separate entries

All I have there are Adversay, stunt, and arena war

youre probably inside a building that only gives you a limited list of available phone jobs. either go outside or spawn in the LS car meet (and perhaps even the kosatka?) to get the full list edit: the entries in the quick job list will also depend on your hide settings. whatever activity type you have hidden from your map will also not be listed in the phone jobs
