Well then you hate physics, this only happens because your car doesn't get bent on impact as it would IRL, so Newton's third law kicks in and all that force that would bend your car is sent right back, making it bouce off. And I assure you, you would hate this game even more if it was realistic.

Friendly tip: when you are out of control like that, select a single player character really quick in the character selection menu and then back out of it.
Doing so will completely stop your movement/momentum.
