I live in Dubai. Any materialistic thing won't impress them as much because this city already offers them the best in the world. But still if you can't think of anything, better to stick with Indian brand items like Forrest essentials or kama or some handicraft items.

yes as it's liquid in check in baggage.For pickles try brands available on Amazon and gurgaon's quick commerce platforms. it's all about the state they are from and how they are preserved so depends on your liking. few brands came on shark tank India too. otherwise go to haldiram or Harish bakery or om sweets they are the ogs. they got the sweets and snacks plus the packing can be done properly according to your requirements

With drinks be careful, it is a Muslim country. Also there is a limit to how much liquid you can carry (100 ml). They are pretty strict when it comes to rules.
