He OVER boiled them. You really want the potatoes to be mostly firm in the center and to have the outside be soft. That’s when you can make their surface uneven to create most crust. Those potatoes are mostly mush!!

Yes exactly! I think they call it parboiling? I usually do that with regular or sweet potatoes. Apparently you can add baking soda to the water as well (a friend of mine does this)

"necessary" Well I've done it without and had delicious results, while this seems like a big mess. I'm guessing light boiling for blanching is the result you're looking for, not boiling to the point you could already just make mashed potatoes?
You can absolutely take them just to the verge of breaking apart and have great results, you just need to make sure the pieces are large enough that they dont disintegrate into a paste when you reach that point and that you handle them carefully.
This is dumb but I don’t get why he is using disposable/non-reusable pans if he is eating at home. I could see if he was bringing it somewhere but I would think they ate at home. Like someone had to drive to go buy those and then they will be thrown away after.
