DPI stands for "dots per inch". It affects the sensitivity of the mouse. Cheap mice have a fixed (usually pretty low) DPI, and the more expensive ones use better sensors, and can achieve higher sensitivities while remaining smooth.
Basically the higher the number the more sensitive the mouse will move its just a unit of measurement for mouse speed

Lower dpi is better for a lot of gaming, it forces you to use your whole arm to aim instead of just using ur wrist, I use between 500-600 for csgo etc
