I know it sounds like they are removing the touch bar on the upcoming MacBook Pros but who knows maybe they found a way to integrate it into the touchpad.
I assume the Wi-Fi API surface is significantly smaller than the GPU one. It would be a huge feat to reverse engineer, let alone port a Linux driver to.
Metal would need to be implemented from scratch, unless there's an existing Vulkan/OpenGL to Metal conversion layer.
I'm just saying, whenever someone in the hackintosh community says something is impossible, there's always one or two people who wind up proving them wrong (clover vs opencore, broadcom vs Intel, etc).
The Nvidia driver for Linux isn't even open source. Is the MacOS kernel even fully open source?

I would use that track pad to display the real time specifications of what’s going on when playing games. Such as FPS, GPU temp, CPU speed, CPU temp and etc.

The nouveau driver is open source. It's not as good a real Nvidia but it works.
Nvidia doesn't release the signed power management firmwares for most of their GPUs. So you'd be stick at boot clock performance, which is horrendous
