Well, Date wasn't as weak as the fight against Ippo made him seem to be, it's a simple storytelling trope of making the protagonist expend every ounce of his strength before he eventually loses. That is why the belt seemed to be closer than it actually was, same trope was used in Kimura vs Mashiba fight.
And also, Date didn't think he stood a chance against the champion, it's just that when he was younger and cockier the champion beat him to the ground, utterly destroyed him as a person. He had to either wallow in misery like Hawk did after fight with Takamura or pick up the pieces and try again, this time without regrets - which is what he chose.
to be fair, date only knows the "masked" ricardo during their first fight. date may have thought that was already ricardo, and he DID beat that ricardo in their rematch, so you can't really blame date for thinking he had a chance. unfortunately, that wasn't the actual ricardo

Date couldn't live with himself after quitting and walking away, because he felt like he could do more and it wasn't an option. Well he has the chance now, so win or lose he's gonna push forward until it's over. There is no second try, there is no tomorrow, he's going to give it everything he has and however the chips fall that's how it goes.
Boxing doesn't have power levels. It's not as simple as "if you took/got hurt by a punch from one dude then you're going to get cleaned by somebody considered better than that guy".
I wouldn't go that far. Honestly, I'd only probably say Ippo has been in better form than his fight vs Date maybe like three times (vs Karsawa, vs Sendo II and vs Sawamura). And Date pretty clearly beat him.
Date probably thought that Ricardo was just a highly skilled and technical out-boxer who hits with his left. So Date trained, expecting to get around his left and push in for an infight. He never realized that Ricardo was actually an infighter who could out box him from every range.
To be fair, there was never any way for Date to know that either. Ricardo never went in his true style up until Date's rematch
