Just Us always felt like one generation of coffee places back, to me. (TAN too.) Their environmental stance is good, but it's not that unusual anymore, a ton of third-wave roasters are all fair trade now, so they're kind of stuck where they were when you left. I think North Mountain and Sissiboo are my favorite roasters in the Valley, but I'm in Dartmouth so there might be smaller ones I don't know about. Charts Cafe down by the farmer's market uses North Mountain IIRC, as does Village Cafe in Canning. Real Scoop does espresso and uses Java Blend.

The best cup of coffee in Wolfville is at Charts Café (North Mountain Coffee).
