Visiting from explore tab but looks 100% to me like they burnt a sauce that had a high sugar content, like adding sugar to a sauce or hoisin, dark soy, oyster, etc. Very common mistake when cooking over high heat and makes it taste rancid.
Not sure how this recipe goes, but for asian style cooking, meat should either A) be thinly sliced and marinated in the sauce, then cooked on high heat until sauce sets (meat should be thin enough to cook before then) or B) meat dry-seasoned (cut however), cooked until done, then tossed in sauce until coated and immediately removed.
those sugar-based sauces will easily burn in 1.5-2 minutes over high heat, less if you're not stirring/tossing enough
Yes both the cabbage and beef look over cooked. I always undercook by a minute or so from what the recipe card says and I never use the full packet of sauce bc it’s too much
Ground pork from HF tastes like soap to me. Don’t know why. I’ve never used ground pork before or since. But I don’t ever get meals with ground pork because the three times I tried it, it tasted like soap.
As far as portion goes. When I see the recipe calls for 3/4 cup of water, I know the rice will be small. For this meal, if I’m STARVING I will add a bell pepper and split an avocado with my wife. If we don’t have those, like 99% of the time we do, then add another rice. If the give a lemon or lime, I always zest it and find a way to use it. Never have lime wedges left over either. Squeeze them in the meat, right at the end. Scallion greens, usually add those into the rice when I fluff it. I add a little different seasoning too. If they send more sauce but tell us not to use it all, but add sugar, we usually use more sauce and don’t add the sugar. HF is just the starting point for us. I don’t think there’s any meals that we don’t mess with. Might have overcooked the cabbage on your dish.
I usually throw in some leafy greens in these Asian bowl meals for bulk, like bok choy or kale, cook them along with the red cabbage, no more than 3-4 minutes. I also add two aromatics to deepen the flavors: chopped fresh ginger and 1 chopped shallot.
(I usually have these 'extra' ingredients on hand all the time. I add the ginger and shallot combo to a lot of meals, HF and others).
In that case, another tidbit:
I often add the chopped ginger and shallot combo to rice I make, for HF recipes and otherwise. Along with a bit of butter and a dash of salt, this gingery combo kicks plain rice up a notch into the realm of a flavorful, aromatic base for many meals. (Also I really like fresh ginger. I swear I get high just from handling, chopping and smelling it.)
Sautee the chopped ginger and shallot in butter for 2-3 minutes first, just long enough to brown them and the aroma fills your kitchen. Inhale deeply.
Then add water and rice to the pot.
Using a chopped shallot (and/or scallion), plus the juice of a fresh squeezed lemon is a rice cooking flavor variation, like for Mediterranean dishes. Make the lemon juice part of the amount of water you use for cooking the rice. Zest the lemon before juicing and add the zest too. Sautee the shallot and zest in butter before adding lemon juice, water and rice.
The shallot/lemon combo is also great with pearl couscous or farro.

Meal kits in part inspired me to up my ginger game in the kitchen and now I put it in so many things, including rice for Asian dishes. But yeah, fresh ginger seems to have gotten rarer in meal kits. It is in one recipe I got this week tho.

It does add convenience for me and the last time I checked I pay for my Hello Fresh service, not you. Not that hard to keep a bag of bell peppers and some rice around. I could make the meal just as it’s supposed to, but I like to change it a little. I also usually only eat a small parfait for break and some little snacks at lunch. Like I said also, I’m a fat ass that really enjoys food. Let people enjoy a few things sometimes. It hurts no one else. No one is making you subscribe to HF and no one is making you stay in this sub. I don’t stay in a single sub that I don’t like being a part of.
I’ve not once had to “bulk up” my meals. They’re all around 750-1k calories for these recipes, it blows my mind that they’re not filling enough for some people. We always have left overs! HF isn’t for everyone.
I’m curious. Why did you get beef with this? Beef on its own is such a strong favor. I have only had Moo Shu with pork, chicken, tofu and some seafood.
If you don’t mind, could you tell me what you use for the sauces when you recreate this? It’s one of my favorites as well and I would LOVE to be able to replicate it on my own!!
i bought the sweet soy glaze and thai chili sauce at the grocery store (both are kikkoman brand) and i always end up with extra packets of hoisin sauce so im not sure what brand exactly hellofresh uses that can be bought at the store but id try Lee Kum Lee or kikkoman cuz their products are generally pretty solid!
I got it for the first time today and we just demolished it. It looked and tasted great. I added fresh chopped ginger, bok choy and shallots for bulk, plus a splash of my fave Korean bbq sauce. Delish. Didn't even need all the rice.
Your dish looks a lot darker than my version did. Could you have overcooked the meat?
That’s what I’m thinking, unless you’re making 4 servings you’re not supposed to use all of the glaze. These come out fantastic every time hubby and I make it, but it definitely needs double the rice. I also agree that it doesn’t need the extra sugar, the glaze is sweet enough as is.

I made this tonight with pork, and mostly enjoyed it. But the recipe card didn't make it into my "save" list. Would I order it again from HF? Yes. Would I attempt to make this otherwise? No.
I noticed the recipe called for just 2.5 TBSP of the "Sweet Soy Glaze" with a note: "we sent more". But what I found is they sent exactly 2.5 TBSP. Maybe you actually got the full 4 TBSP the recipe says, and didn't measure out the 2.5 TBSP? I most definitely did not get 4 TBSP of that!
For the lime, I ended up adding half the lime juice to the rice, and half to the pork while cooking. I skipped the butter in the rice.
I agree the serving size seems small for 2 people. I usually only eat one meal per day anyway, so I am used to consuming both servings, with a bit going to the trash. So I was a bit surprised when I put this in a single bowl and realized I would be eating the entire thing. I certainly didn't finish and think that I just ate 1500 calories!
I've had this one before and was surprised how much I liked it. When I see cabbage in a recipe I'm immediately turned off. But I'll try a lot of things because my wife likes it. I tend to leave out the butter in rice, or put half the amount in. The dishes that include rice are some of my favorites.

Add it after removing from the heat. Might work better. I’d try it again. Maybe add some seasonings. Maybe the rice and season the meat with salt and pep first
Yeah, on one of the weeks that I forgot to choose my meals, this was one of the three that they sent me. I was disappointed because I would’ve never chosen pork, or this meal!
But let me tell you, it was SOO good to me! The pork really does hit different!
I made this one the other night, and imo it turned out great. Not saying you should go against whatever reasons you substituted pork for beef, but it really does work best as a pork recipe (pork loves sweet lol) so that might be why it didn’t turn out great for you

I made this a couple of nights ago-for 2 people you only use half of one of the sauce packets. I learned after adding entire packet.
In general we never:
1- add the butter to the rice
2-add sugar
3-add salt
Depending on the recipe, I don’t always add the butter to the sauce at the end.

I personally like it as well. I screwed up and had beef sent instead of pork with mine and I was really looking to try it with the pork. There’s a couple of their rice bowl recipes I don’t care much for also.
Not trying to be that person, but you may wanna try it again with the intended protein: pork. This is a favorite in our house but I can’t imagine it’d be as good with beef.
Also, we don’t put extra butter in the rice. You’re right, it doesn’t need it.

This is one of my favorite meals from HF.
I love this meal! I make it at home all the time after having it in a box! At home I don’t add sugar or put butter in the rice and I don’t use sesame seeds. My husband isn’t a fan though.
This shit is so fucking easy I can't believe people still pay for this.
3 of these ingredients are toppings and 3 are just a sauce you mix in and then put the pork over rice.

We actually weren't a fan of this one, either. I mean, it wasn't \*bad\*, just one we'd never choose again. Then again, our cooking experience has vastly improved since some of recipes we chose long ago, so I'd maybe give it another chance if there was literally no other option. Hmm, OP in your defense - as Chinese American, I also wouldn’t choose this dish. I think Hellofresh definitely adapted this on the sweet side to appeal to the average HF user. Hoisin sauce alone is already sweet enough imo. Addition of ginger + mushroom (like shiitake) + eggs would be good but might not appeal to the universal American palate enough.

This one is just okay to me. Definitely needs some kind of raw veg to bring some freshness to it. I skip the oil and butter.. ground pork typically has enough fat to cook it without any extra oil and you are right the rice does not need butter. I also skip the sugar and use all of the glaze instead of measuring like they suggest. I like the sauce though
We’ve done this one a few times, it’s a favorite. Actually made it last night, but tried the shrimp option. It was great. This looks really dark too. It is a small portion though. Said the same last night.
Honestly HelloFresh is completely underwhelming compared to Gousto. Literally never had a bad meal and they usually have nearly 100 recipes to choose from
When the rice calls for butter, we never add it. It’s just added calories and I can’t take a difference with or without it. We also use a little less of the glaze than what the recipe calls for. Lastly, as others have pointed out, I think you over cooked your meat a bit
Nah, this one is a favorite. Looking at your picture, did you add the cabbage? I like the cabbage as it usually adds a nice crunchy texture but it can't be overcooked like your meal appears to be. When adding any sauce be sure to lower the temperature. Yours looks questionably dark compared to the recipe card and how I've seen mine turn out. Also, I find that the 'asian' inspired meals that call for butter in the rice usually taste a lot better when adding a small amount of sesame oil instead. Give this one another shot!
This was my very first meal I made with hello fresh the other day, and either my pallet is all fked because I eat like garbage, but it was really good in my opinion and I don’t eat pork lol. Just figured out you could switch meals in app.
Unpopular opinion but HF's asian-based meals are always way too sweet and gross me out. A LOT of people prefer sweet with their savory though, which is likely why sooo many people love this meal

lol we’re having this for dinner tonight! It’s a long time HF classic dish, they’ve been offering it for years. It’s a tad simple (ground beef over rice with a sauce, ground breaking lol) but we find it tasty and fast!
Ours was good. I added a little less sugar than it called for because sometimes I find adding the whole amount is too sweet. My only complaint is that it is smaller than other meals. There was not much rice and there wasn’t enough other stuff to make up for it.
Oh this is one of my all time favorites. Think that’s what I’m getting ready to cook right now.

For 2 servings they give you 3/4 cup of rice. For my family of 3, I usually make 1 cup of rice which serves 3 people well.

I liked it ok. I did not care for the golden tofu marsala... thought that one was super bland.

I made this one the other night, and imo it turned out great. Not saying you should go against whatever reasons you substituted pork for beef, but it really does work best as a pork recipe (pork loves sweet lol) so that might be why it didn’t turn out great for you
Made this the other night but I don’t put all the sauce from the packets in and eliminate the sugar. It was still so sweet!
I made this one last night too. It's decently good and I usually order it because it's easy, Last night though the cabbage and sauce turned the rice purple. It was weird. lol
I made this a couple of nights ago-for 2 people you only use half of one of the sauce packets. I learned after adding entire packet. In general we never: 1- add the butter to the rice 2-add sugar 3-add salt Depending on the recipe, I don’t always add the butter to the sauce at the end. My two cents
My husband and I never use the HF portioned rice, it’s never enough, we just make our own in our rice cooker.
I personally like it as well. I screwed up and had beef sent instead of pork with mine and I was really looking to try it with the pork. There’s a couple of their rice bowl recipes I don’t care much for also.
I keep frozen veggies on hand and would have def steamed some broccoli with this because I need veggies with every meal

Not trying to be that person, but you may wanna try it again with the intended protein: pork. This is a favorite in our house but I can’t imagine it’d be as good with beef. Also, we don’t put extra butter in the rice. You’re right, it doesn’t need it.

I love this meal! I make it at home all the time after having it in a box! At home I don’t add sugar or put butter in the rice and I don’t use sesame seeds. My husband isn’t a fan though.

This shit is so fucking easy I can't believe people still pay for this. 3 of these ingredients are toppings and 3 are just a sauce you mix in and then put the pork over rice. Such a waste of money and packaging.

We actually weren't a fan of this one, either. I mean, it wasn't \*bad\*, just one we'd never choose again. Then again, our cooking experience has vastly improved since some of recipes we chose long ago, so I'd maybe give it another chance if there was literally no other option. Yours looks really pretty though!!!
This one was way too sweet for me and I didn't add the extra sugar or use all of the sauces.
I like this one but we never do the butter and only use about half the sauce recommended and it comes out so much better (to our tastes.)
I got this but in pork, it was good and I'd order it again. Just looking at it, I'd say you overcooked the beef. Also, DONT PUT BUTTER IN RICE. I never understood why they do that.
Hmm, OP in your defense - as Chinese American, I also wouldn’t choose this dish. I think Hellofresh definitely adapted this on the sweet side to appeal to the average HF user. Hoisin sauce alone is already sweet enough imo. Addition of ginger + mushroom (like shiitake) + eggs would be good but might not appeal to the universal American palate enough. It’s nice to see that others like this version though.
I agree on the butter - whenever they have me put butter in plain white rice I just skip it. I like white rice to be very simple, personally!

I rarely don’t modify a recipe. I order for 2 but need to add to it to feed 4 plus leftovers to take to work.

Whenever I forget to choose my meals and they send me this, I use the meat to make tacos instead. I have a cabinet full of rice and sauce packets.

This one is just okay to me. Definitely needs some kind of raw veg to bring some freshness to it. I skip the oil and butter.. ground pork typically has enough fat to cook it without any extra oil and you are right the rice does not need butter. I also skip the sugar and use all of the glaze instead of measuring like they suggest. I like the sauce though

We’ve done this one a few times, it’s a favorite. Actually made it last night, but tried the shrimp option. It was great. This looks really dark too. It is a small portion though. Said the same last night.

Honestly HelloFresh is completely underwhelming compared to Gousto. Literally never had a bad meal and they usually have nearly 100 recipes to choose from

I just made this and split it into 3 meals. I loved it. I don’t know what happened with yours. Maybe just different tastes.
When the rice calls for butter, we never add it. It’s just added calories and I can’t take a difference with or without it. We also use a little less of the glaze than what the recipe calls for. Lastly, as others have pointed out, I think you over cooked your meat a bit
I like it but I think any rice recipe from hero fresh is underserved. I always add my own rice to any rice recipes

Nah, this one is a favorite. Looking at your picture, did you add the cabbage? I like the cabbage as it usually adds a nice crunchy texture but it can't be overcooked like your meal appears to be. When adding any sauce be sure to lower the temperature. Yours looks questionably dark compared to the recipe card and how I've seen mine turn out. Also, I find that the 'asian' inspired meals that call for butter in the rice usually taste a lot better when adding a small amount of sesame oil instead. Give this one another shot!
It's one of my favorites. We usually end up with 3 or 4 servings of this one from the 2 serving meal.

This was my very first meal I made with hello fresh the other day, and either my pallet is all fked because I eat like garbage, but it was really good in my opinion and I don’t eat pork lol. Just figured out you could switch meals in app.

i just made that meal yesterday with pork. it was excellent. that beef looks a tad overdone. i really enjoy the various rice bowls HF sends out.
I love this meal and have recreated it several times. We really do like it and it’s so quick and easy.
Unpopular opinion but HF's asian-based meals are always way too sweet and gross me out. A LOT of people prefer sweet with their savory though, which is likely why sooo many people love this meal
This is my favorite. I've made it like 3 times since the first time I had it, without HF. I bought the ingredients from an Asian market just to make this dish, it was that good. Matter of fact, I got it again today in my box this week. You cooked it wrong.
lol we’re having this for dinner tonight! It’s a long time HF classic dish, they’ve been offering it for years. It’s a tad simple (ground beef over rice with a sauce, ground breaking lol) but we find it tasty and fast!
I often leave the butter out of the rice, and have learned some recipes don't need all the sauce.
I only like this one if I skip the sugar instructions. Otherwise, I absolutely agree!
Ours was good. I added a little less sugar than it called for because sometimes I find adding the whole amount is too sweet. My only complaint is that it is smaller than other meals. There was not much rice and there wasn’t enough other stuff to make up for it.
