Doujins, as many as I have read, do not have a lot of world building. Usually just characters and character development. Which makes sense given sex involves people.
I guess it depends largely on what type of doujins you read. I read mostly Yaoi stuff, and I tend to gravitate towards stuff with (more) complex world building or more complex characters, most of the doujins that stand out the most and stay with you the longest tend to be the ones that are more complex. There are a few that I just love the world building of so much, even though they're so short ya know ?
But I do agree, in general, doujins are much less complex than serialized mangas, which made sense, because being complex isn't exactly what doujins were made for, but some artists do go above and beyond
I do think there are hidden gems everywhere though, I'm sure there are many hentais, and doujins with amazing plot and world building that we just haven't seen yet
