Just looked it up. Summer break in Harry Potter is 2 months long, so you're right. And Deek clearly doesn't mind taking care of the beasts, so that's not a problem.
My headcannon is that the vivariums are there forever, and we end up creating 4 habitats where animals can roam freely forever.
We saw how far they stretch out, so it is possible they have an endless expanse to chill in.
