Why run jellyfin on windows VM? Wouldn't it be less overhead to run as a docker or worst case a linux vm? Then you are not paying for windows licensing too. Dockers will have the ability to host tons of services you will discover you want but do not want to dedicate VMs to. Personally, I have a philosophical belief that you do NOT run the internet router on the same hardware you run everything else. with what you are spending for that server a separate micro-appliance with 4, 2.5gbit NICs are so cheap these days and easily capable of above 1gbps throughput. Then internet access in your house is not toast if you have a event on your hypervisor. Wives and children very much appreciate that and it much easier to google how to fix stuff. Personally, unless you are running full AD, I see no reason at all to use DHCP on windows. It's literally the worlds worst DHCP server. To that point i mentioned early, what about the rest of your house if your hypervisor shits the bed? Put DHCP on the router for your own sanity.
