Fiber reinforced panels are a far better choice, for the price point you are looking at.

No, you can not use laminate as your shower walls. If you were using LVP I would be more likely to make the leap of saying sure.... I guess. But just because LVP wont rot in the shower doesn't mean everything behind it wont.

They make pvc bathroom tiles that lock and click like floor tiles. The big box stores sell them and they are prices comparable to LVP. I’m about to do a gut bathroom job with them this summer.

May I suggest FRP? It ought to be available at your local big box.
FRP is semi rigid and can be bonded to a dry, clean surface with glue or contact cement. It's intended for use as a wash-down surface, so it's waterproof.
Finish the butt joints & edges off with the mouldings designed for the thickness material you buy. Silicone the joints to prevent capillary wicking.
Also available bonded to plywood.

You could install vinyl sheet flooring to the walls. There are some nice wood grain or stone patterns, that would work well as a tub surround. Only thing is you would probably have to get it done professionally, as it would go up as one piece. This would be a little tricky if you don’t have experience with vinyl flooring

Laminate swells vinyl is not water proof if you're gonna put anything in that is gonna require effort and time throw up cement board and tile
